Strawberry Lemon Blondies

Description

These strawberry lemon blondies are the perfect mix of sweet and tart flavors! This beautiful summer dessert will be a hit at any party!


Ingredients

For the Blondies:

  • 1 cup butter (room temperature)
  • 3/4 cup granulated sugar
  • 1 egg
  • 2 1/4 cups all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup strawberries (diced)
  • 1/4 cup lemon juice
  • 1 tablespoon lemon flavoring
  • neon pink and neon yellow food coloring gel (optional)

For the Frosting:

  • 4 oz cream cheese (softened)
  • 2 tablespoons butter, room temperature
  • 3/4 cup powdered sugar
  • 1/2 teaspoon vanilla
  • 1 tsp neon pink food coloring gel

Instructions

  1. Preheat your oven to 350 degrees. Line an 8×8 baking dish with parchment paper
  2. In the mixing bowl of a stand mixer, mix together the butter, sugar, and egg until light and fluffy.  
  3. In a separate bowl, mix the flour, baking powder, and salt, until well blended.  
  4. Add the flour mixture to the mixing bowl, a little at a time, mixing between additions.  Scrape down the sides of the mixing bowl, and blend one more time.
  5. Divide the batter in half. Add the diced strawberries to one half, and the lemon flavoring and lemon juice to the other half.  Stir well.  
  6. Add a teaspoon of neon pink food coloring gel to the strawberry half, and add neon yellow food coloring gel to the lemon half. 
  7. Pour the strawberry batter into the prepared baking dish and spread the batter out.  Layer the lemon batter on top of the strawberry batter, and gently spread to smooth.  
  8. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.  Remove to a wire rack to cool.
  9. While the blondies are cooling, prepare the frosting.
  10. Place the cream cheese in the mixing bowl of a stand mixer, and add the butter, and blend until smooth and creamy.  Add the vanilla, and neon pink food coloring gel, and mix until blended.  Add powdered sugar a little at a time, until all has been added, and frosting is smooth and creamy.  
  11. Once the blondies are cool, place the frosting on top of the lemon layer of blondies and smooth to make a thick layer of Frosting.  Allow frosting to sit for 2 hours, to set, before serving.
