Spinach & Artichoke Hummus

Description

This spinach and artichoke hummus is an easy, delicious, and flavorful appetizer! It makes a great healthy snack and it’s perfect for shairng.


Ingredients

Scale
  • 1 (15.5 oz) can chickpeas, drained
  • 1/2 cup artichoke hearts, drained
  • 3 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons water
  • 1/4 teaspoon salt
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon cumin
  • 1 tablespoon nutritional yeast flakes
  • 1/2 cup fresh baby spinach, chopped
  • A few dashes of cayenne pepper
  • Optional: extra olive oil for drizzling on top
  • Something to serve it with! (veggies, pita, crackers, etc.)


Instructions

  1. Combine the chickpeas, olive oil, lemon juice, garlic salt, water, garlic, cumin, salt, nutritional yeast, and cayenne to your food processor.  Pulse until smooth.
  2. Add in your spinach and artichokes.
  3. Pulse until blended well.
  4. Taste and season with additional salt/cayenne/etc to get to your desired spice if necessary.
  5. Serve with veggies (I love it with celery or carrots), crackers, pita, or whatever you want!
