Savory Waffles with Spicy Maple Syrup

Gluten Free, Dairy Free, Refined Sugar Free

Savory waffles will spice up your brunch thanks to the hot sauce infused batter and the spicy maple syrup.  Made healthier using almond flour, no refined sugar, and a whole serving of veggies! 


Ingredients

Waffles:

  • 1 cup shredded zucchini
  • 1 egg
  • 1/2 cup almond flour
  • 2 tbsp Yellowbird Sauce. (I have used both the agave srircha and habanero)
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 2 dashes of cayenne

Syrup:


Instructions

Waffles:

  1. Shred your zucchini, measure out one cup,  and then dry it out a little bit (doesn’t need to be completely dry you just don’t want it soaking wet.  You can use paper towels).
  2. Combine all ingredients in a large mixing bowl and stir until combined.
  3. Bake on a waffle maker following appliance’s instructions.

Syrup:

  1. Combine maple syrup and hot sauce and whisk to combine
  2. Pour generously over waffles!

Notes

You can also top these with other fun options! One of my favorite is spreading spicy guacamole over them and topping with a fried egg.
