This crisp and refreshing celery salad is everything you didn’t know you needed in a side dish! Made with mandarin oranges, dried cranberries, feta, and a lemony vinaigrette, it’s a mix of sweet, salty, and tangy!

For the salad:
- 3 cups celery, thinly sliced (about 12 oz)
- 2 Tbsp chopped celery leaves
- 1 cup mandarin oranges, drained
- ¼ cup dried cranberries
- 2 tablespoons roasted pistachios (shelled)
- ¼ cup feta cheese, crumbled
For the Dressing:
- 3 tablespoons lemon juice
- 2 teaspoons honey
- 1 teaspoon Dijon mustard
- ¼ cup olive oil
- ½ teaspoon salt
- ¼ teaspoon pepper
Instructions
- In a large bowl, combine the sliced celery, celery leaves, mandarin oranges, and dried cranberries.
- In a small bowl, whisk together the lemon juice, honey, Dijon mustard, salt, and pepper. Slowly whisk in the olive oil until the dressing is emulsified.
- Pour the dressing over the salad and toss to combine.
- Gently fold in the feta and pistachios just before serving.
- Serve immediately or chill for up to 2 hours for even more flavor!
