Description

This crisp and refreshing celery salad is everything you didn’t know you needed in a side dish! Made with mandarin oranges, dried cranberries, feta, and a lemony vinaigrette, it’s a mix of sweet, salty, and tangy!


Ingredients

For the salad:

  • 3 cups celery, thinly sliced (about 12 oz)
  • 2 Tbsp chopped celery leaves
  • 1 cup mandarin oranges, drained
  • ¼ cup dried cranberries
  • 2 tablespoons roasted pistachios (shelled)
  • ¼ cup feta cheese, crumbled

For the Dressing:

  • 3 tablespoons lemon juice
  • 2 teaspoons honey
  • 1 teaspoon Dijon mustard
  • ¼ cup olive oil
  • ½ teaspoon salt

  • ¼ teaspoon pepper

Instructions

  1. In a large bowl, combine the sliced celery, celery leaves, mandarin oranges, and dried cranberries.
  2. In a small bowl, whisk together the lemon juice, honey, Dijon mustard, salt, and pepper. Slowly whisk in the olive oil until the dressing is emulsified.
  3. Pour the dressing over the salad and toss to combine.
  4. Gently fold in the feta and pistachios just before serving.

  5. Serve immediately or chill for up to 2 hours for even more flavor!
