Description

Gluten Free, Vegan, Refined Sugar Free

A soft vegan cookie, sweetened naturally with coconut sugar and maple syrup, topped with your favorite melty salted dark chocolate bar for the perfect guilt free dessert!


Ingredients

Scale
  • 1 cup almond flour
  • 1 cup gluten free all purpose flour
  • 1 tbsp ground flax seeds
  • 1 tsp baking soda
  • 1/3 cup coconut sugar
  • 1 cup nut butter
  • 1/4 cup apple sauce
  • 1/4 cup maple syrup
  • cashew milk (if needed – see directions)
  • 1 Hu Kitchen salty dark chocolate bar


Instructions

  1. Preheat oven to 375F.
  2. Combine all dry ingredients together in a large bowl (almond flour through coconut sugar) and mix well.
  3. Add wet ingredients (everything except cashew milk and chocolate bar).
  4. Add a little cashew milk if dough is too dry.
  5. Separate dough into 8-12 pieces*, roll into balls, and then flatten into patty shapes.
  6. Place on a cookie sheet lined in parchment paper and bake for 10 minutes, then add chocolate pieces, and bake 5 more minutes.

Notes

*the chocolate bar will only have 8 pieces of chocolate to put on cookies – I still made 12 cookies though because I didn’t want them to be huge – just added some chocolate chips to these – you could leave plain though!
