Gluten Free, Dairy Free, Refined Sugar Free
PBJ Thumbprint cookies combine a soft chewy nut butter cookie with a tart yet sweet raspberry jam. They are made healthier using no flour, no refined sugar, and no added oils. Perfect for a healthy snack or even for breakfast!
Ingredients

- 3/4 cup creamy peanut butter or almond butter
- 1/3 cup coconut sugar
- 1 egg
- 1/2 teaspoon baking soda
- Pinch of salt
- Raspberry chia jam or your favorite jam
Instructions
- Preheat oven to 350 degrees.
- Combine all ingredients (except jam) into a bowl and stir until well combined.
- Roll into small balls of dough, and on a cookie sheet lined with parchment paper press into them with your index finger to create a well for the jam.
- Pour a dollop of jam into each well.
- Bake for 20 minutes until edges are golden brown.
Notes
I suggest making these on the smaller side rather than bigger so that the cookie bakes well enough. If you make them too large the cookie is too soft to hold the jam
