This cheesy broccoli soup cooks quickly and easily in the Instant Pot! It’s the perfect cozy comfort food when you’re craving something savory.

- 2 tablespoons butter
- 2 stalks celery, chopped
- 2 large carrots, peeled, and chopped
- 1 large yellow onion, diced
- 5 cloves garlic, minced
- 4 cups chopped broccoli florets
- 2 cups vegetable broth
- 2 cups whole milk
- 12oz extra sharp cheddar cheese (about 3 cups shredded)
- Salt and pepper to taste
Instructions
- Set the Instant Pot to sautè and add the butter, onions, carrots, and celery. Sautè for 5 minutes, stirring frequently.
- Add the garlic and sautè for an additional minute.
- Add the broccoli and vegetable broth. Press cancel to end the sautè function.
- Lock the Instant Pot lid and set the vent to sealing.
- Press Manual and set the time for 5 minutes.
- Once the timer runs out, release the pressure.
- Remove the lid and stir in the cream and cheese, stirring constantly until the cheese melts completely.
- For a smooth texture, use an immersion blender to blend until you reach your desired consistency.
- Add salt and pepper to taste, if needed.
