Description

This cheesy broccoli soup cooks quickly and easily in the Instant Pot! It’s the perfect cozy comfort food when you’re craving something savory.


Ingredients

Scale
  • 2 tablespoons butter
  • 2 stalks celery, chopped
  • 2 large carrots, peeled, and chopped
  • 1 large yellow onion, diced
  • 5 cloves garlic, minced
  • 4 cups chopped broccoli florets
  • 2 cups vegetable broth
  • 2 cups whole milk
  • 12oz extra sharp cheddar cheese (about 3 cups shredded)
  • Salt and pepper to taste

Instructions

  1. Set the Instant Pot to sautè and add the butter, onions, carrots, and celery. Sautè for 5 minutes, stirring frequently.
  2. Add the garlic and sautè for an additional minute.
  3. Add the broccoli and vegetable broth. Press cancel to end the sautè function.
  4. Lock the Instant Pot lid and set the vent to sealing.
  5. Press Manual and set the time for 5 minutes.
  6. Once the timer runs out, release the pressure.
  7. Remove the lid and stir in the cream and cheese, stirring constantly until the cheese melts completely.
  8. For a smooth texture, use an immersion blender to blend until you reach your desired consistency.
  9. Add salt and pepper to taste, if needed.
