Homemade Blueberry Pop Tarts

Description

Gluten Free, Vegan, Refined Sugar Free

Your favorite childhood breakfast without all of the refined carbohydrates, icky additives, and processed ingredients.  These HEALTHY pop tarts are flaky, the perfect amount of sweet, and are great served warm or cold.


Ingredients

Scale

Jam Filling:

  • 1 cup blueberries
  • 1 tbsp maple syrup
  • 1 tbsp chia seeds

Crust:

  • 1 cup oat flour
  • 1/2 cup almond flour
  • 2.5 tbsp coconut oil
  • 2.5 tbsp maple syrup
  • dash of salt
  • dash of cinnamon

Optional Glaze:

  • 1 tbsp leftover jam filling
  • 2 tbsp powdered sugar
  • 2 tbsp cashew milk

Instructions

  1. Preheat oven to 350F.

Make Jam:

  1. Combine blueberries and maple syrup together in a small sauce pan over medium heat.  Keep over heat until its reduced and  you can break up blueberries and it becomes more sauce-like.
  2. Remove from heat, stir in chia seeds, and put in fridge while you make crust to allow it to thicken (NOTE: you can also make this a day ahead to let it thicken even more!)

Make Crust:

  1. Combine crust ingredients together in a large mixing bowl an stir until combined and a dough forms.
  2. Roll the dough flat between two pieces of parchment paper, as thin as you can without it breaking.
  3. Cut into rectangle pieces (2 for one bar, 4 for two bars, etc)
  4. Scoop a spoonful of jam into the center of one rectangle of dough, and then top with another rectangle.
  5. Using a fork, press edges shut.
  6. Bake for 30 minutes.

Optional glaze on top:

  1. Combine extra jam filling with powdered sugar and cashew milk.  Start with measurements above and adjust based on how thick or thin you want it to be.  Drizzle on top!
