Ingredients

For the Brownie Base:

  • 1 box brownie mix (for an 8×8-inch pan)
  • Ingredients listed on the brownie mix box (typically eggs, oil, and water)

For the Mint Filling:

  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons milk (plus more if needed for consistency)
  • 1 teaspoon peppermint extract
  • 57 drops green food coloring (optional)

For the Andes Mint Topping:

  • 1 cup Andes mints, chopped

Instructions

1. Prepare the Brownie Base:

  • Preheat your oven to the temperature listed on the brownie mix box. Grease and line an 8×8-inch baking dish with parchment paper, leaving a bit of overhang for easy removal.
  • Follow the directions on the box to prepare the brownie batter. Pour the batter into the prepared baking dish and bake according to the package instructions.
  • Allow the brownies to cool completely before moving on to the next step.

2. Make the Mint Filling:

  • In a medium bowl, beat the softened butter until creamy. Gradually add the powdered sugar and mix until smooth.
  • Add the peppermint extract, food coloring (if desired), and 1 tablespoon of milk at a time until the filling is thick but spreadable.
  • Spread the mint filling evenly over the cooled brownie base, then top with chopped Andes mints. Chill in the refrigerator for 30 minutes to set.
