Description

Gluten Free, Vegan

Air fried cauliflower gnocchi – crisp on the outside, soft on the inside.  Rolled around in a cinnamon sugar coating.  Dunked into a sweet and smooth vanilla glaze.  Your breakfast will never be the same.


Ingredients

Scale

Gnocchi:

  • 1 bag of Trader Joe’s cauliflower gnocchi
  • 1/3 cup sugar
  • 1 tsp cinnamon

Glaze:

  • 2/3 cup powdered sugar
  • 2 tbsp cashew milk

Instructions

  1. Microwave gnocchi for 1-2 minutes if there is any freezer burn on it.  If not, you can skip this step.
  2. Spray air fryer with coconut oil and bake gnocchi at 400F for 5 minutes.  While this is baking, made cinnamon sugar coating by combining the sugar and cinnamon together in a bowl.
  3. Remove gnocchi, spray with additional coconut oil, and roll each gnocchi in cinnamon sugar mixture to coat.
  4. Return to air fryer and cook for 9 more minutes, tossing halfway through.
  5. To make the glaze, stir the powdered sugar and cashew milk until sugar is dissolved.
  6. Dip and enjoy!

Notes

If you want this to be refined sugar free you can swap the sugar for cinnamon sugar and just not use the glaze.
