Christmas Red Velvet Snow Globe Cupcakes

Description

Shake up some Christmas magic this holiday season with these adorable Red Velvet Snow Globe Cupcakes! Not only are they fun to look at, but they are delicious to eat too!

 

Prepare the Gelatin Snow Globes : 1 Day Before

  1. Soak the gelatin sheets in cold water for 5 minutes

  2. Squeeze the excess water out of the gelatin and put them in a saucepan. Pour the cold water over the gelatin. Stir on the stove until it melts, avoid overheating

  3. Inflate the balloons. Slowly dip the balloons into the gelatin. Let it dry for 10 minutes, then dip the balloons a second time.

  4. Let the gelatin dry on the balloons for at least 24 hours.

  5. After the gelatin has dried, carefully pop the balloons and pull them out of the gelatin.

Prepare the Cupcakes

  1. Preheat the oven to 350 degrees. Line your muffin tin with cupcake liners.

  2. In a large bowl, mix the egg, sugar, yogurt, buttermilk, vegetable oil and vanilla extract.

  3. Sift the flour, cocoa powder, a pinch of salt and baking soda together in a separate bowl.

  4. Add the dry ingredients to the wet and stir with a spatula, being careful not to overmix.

  5. Add the red food coloring little by little until you get your desired shade.

  6. Divide the mixture into the muffin tin.

  7. Bake for 20 minutes, or until a toothpick inserted in the middle of the cupcake comes out clean.

  8. Allow to cool before frosting.

Prepare the Cream Cheese Frosting

  1. Beat the softened butter, vanilla extract and cream cheese until smooth.

  2. Slowly add the powdered sugar and whisk for 3 minutes

  3. Add the frosting to a piping bag and frost the cupcakes. Decorate with the marzipans as you desire. Top the cupcakes and decorations with a gelatin snow globe.

For the Cake

  • 1 large egg
  • 1 cup granulated sugar
  • 2/3 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 tablespoons plain yogurt
  • 1 tablespoon vanilla extract
  • 1 2/3 cups all purpose flour
  • pinch of salt
  • 1 1/2 teaspoons baking soda
  • 1 1/2 tablespoons cocoa powder
  • red food coloring
  • colorful marzipans

For the Cream Cheese Frosting

  • 1/2 cup butter (room temperature)
  • 8oz (1 cup) cream cheese softened
  • 2 1/2 cups powdered sugar
  • 2 teaspoons vanilla extract

For the Gelatin Snow Globes

  • 14 sheet gelatin
  • 5 tablespoons cold water
  • water balloons
