Description

These protein cereal bars are a high protein, delicious breakfast option! Made with your favorite cereal, protein powder, and nut butter, these are naturally sweetened with maple syrup for a tasty treat that is healthy for you!


Ingredients

Scale
  • 2 cups cereal (I recommend Cheerios or Power O’s cereal.)
  • 1 (25g) scoop your favorite protein powder
  • ½ cup peanut butter or your favorite nut butter
  • 1 tablespoon coconut oil
  • 1/3 cup maple syrup
  • 1 tablespoon dried goji berries
  • 1 tablespoon Bee pollen (optional)

Instructions

  1. Combine cereal and protein powder together in a large mixing bowl, set aside.
  2. In a small sauce pan over medium heat, combine peanut butter, maple syrup, and coconut oil. Stir until everything is melted and well combined.
  3. Pour melted nut butter mixture over cereal, folding in gogi berries and bee pollen until everything is evenly coated and berries/pollen are evenly disbursed.
  4. Pour into a small baking dish lined with parchment paper.
  5. Freeze for 30 minutes, then move and store in fridge. Cut into 4 bars or 8 squares

Notes

For a higher protein option, use Power O’s cereal.
