CBD Infused Brownies AND Chocolate Frosting

Description

Vegan, Refined Sugar Free

These CBD brownies are soft and fudgy, oozing with chocolate, and provide all of the benefits of cbd oil.  Made healthier using zucchini, whole wheat flour and no refined sugar.  Perfect afternoon snack to relieve stress!


Ingredients

Brownies:

  • 2 cups shredded zucchini (I used about two small zukes to get this)
  • 1 cup whole wheat flour
  • 1/3 cup unsweetened apple sauce
  • 2/3 cup dairy free milk (I used cashew milk)
  • 1 tbsp ground flax seeds
  • 1/4 cup cocoa powder
  • 2 tbsp agave
  • 1 scoop UnCanny Barista Blend Water Soluble CBD
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/3 cup dairy free, sugar free dark chocolate chips (optional)

Frosting:


Instructions

Brownies:

  1. Preheat oven to 350F.
  2. Grate zucchini and measure out 2 cups, set aside any extra (maybe to use for this recipe!).
  3. Combine all brownie ingredients except chocolate chips together in a large mixing bowl and stir well until combined.
  4. Fold in chocolate chips.
  5. Pour batter into a greased 8×8.baking dish.
  6. Bake for 30 minutes.

Frosting:

  1. Soften potato in the microwave – poke holes throughout potato, wrap in a paper towel, and cook for 5 minutes.  Be careful and let cool for a couple minutes after.
  2. Open potato and scoop out contents and place in a mixing bowl – discard skin.
  3. Add Stevia, cocoa powder, and 1/4 cup of milk.
  4. Using an immersion blender whisk attachment (or handheld whisk), whisk frosting until smooth.
  5. Add more milk, up to 1/2 cup, until you reach desired consistency.
  6. Spread as much as you want on your brownies!

Notes

You do not need to include the CBD in these brownies if you’d prefer to skip that.  They will still be delicious!
