Gluten Free, Dairy Free, Vegan Option, Refined Sugar Free
These NO BAKE cookies are a great way to easily practice seed cycling in a delicious way. But seed cycler or not, they are a great treat for your afternoon energy boost!
Ingredients
- 1 cup gluten free oats (I love these ones)
- 3/4 cup Julie’s Real cacao espresso almond butter
- 7 tbsp pumpkin seeds – freshly ground
- 7 tbsp flax seeds – freshly ground
- 2 tbsp maple syrup
- Optional: melted chocolate* for drizzling!
Instructions
- Grind your pumpkin seeds, measure out 7 tablespoons
- Grind your flax seeds, measure out 7 tablespoons.
- Combine all ingredients in a large mixing bowl and stir until well combined (if mixture is too dry, add more almond butter and/or maple syrup. If it is too wet, add more oats).
- Form into seven cookies.
- Optional: drizzle some melted chocolate on top! (mix with a little coconut oil to make drizzling easier)
Notes
*To make this recipe vegan you can make it with any plain nut butter or use NuttZo’s Chocolate Power Fuel to retain the chocolate/cacao flavor (could also add espresso beans if you want to keep that flavor too!)

Seed Cycling Note: As-is, this recipe is suited to support the follicular phase of your cycle.
