Cabbage Slaw with Maple Horseradish Dressing

Gluten Free, Vegan, Refined Sugar Free

This cabbage slaw is crisp and fresh, and when paired with subtly sweet yet slightly spicy maple horseradish dressing, it creates the perfect side dish for any family BBQ.


Ingredients

Scale

Slaw:

  • 2 cups sliced cabbage (About 1/4 of a full cabbage)
  • 1 cup matchstick carrots
  • 1 persian cucumber

Dressing:

  • 1 tbsp extra virgin olive oil
  • 1 tbsp horseradish mustard
  • 1 tbsp maple syrup
  • 1 tbsp water
  • 1 tsp fresh lemon juice
  • 1/2 tsp apple cider vinegar
  • 1/4 tsp black pepper
  • dash garlic salt


Instructions

  1. Slice cabbage thin, cut cucumber in slices and then in fourths, add all veggies to a large mixing bowl.
  2. Combine all of the dressing ingredients in a small cup and whisk until combined.
  3. Pour dressing on veggies and mix until evenly distributed.  Save overnight for best flavor.

Notes

A regular cucumber is fine if that is all your store has.  It will produce more and has a slightly different flavor
