Sweet Potato Quiche

This veggie packed quiche uses sweet potato as the crust! The filling is made with fluffy eggs, spinach, and, butternut squash. 

Spray a pie pan with nonstick spray, and then layer the potatoes on the bottom and on the side of the dish. Bake for 20 minutes.

While that is baking, sautè the spinach, garlic, and onion for 3-4 minutes. Add to the cooked crust.

Add steamed butternut squash.

Combine your eggs, milk, and spices in a large bowl and whisk until combined. Pour on top of the cooked veggies.

Bake for an additional 30 minutes, until eggs are cooked through.
