Jumbo Lemon Poppyseed Muffins Recipe

Combine the flour, baking powder, salt and baking soda.

In a large mixing bowl, whisk together the butter and sugar. Add the egg, buttermilk, sour cream, vanilla, and lemon zest and whisk again.

Add in the flour mixture and whisk just to combine. Mix in the poppyseeds.

Divide into a 6 cup muffin pan and bake.

Bake until muffins are lightly golden brown.

While the muffins are baking, make the glaze. Whisk the powdered sugar and lemon juice until smooth.

Once the muffins are cooled, spread the glaze on top. If you wish, you can sprinkle some poppy seeds on top of the glaze. Serve and enjoy!
