Why choose between pancakes and donuts when you can have both?? These pancake mix donuts are made with a quality mix making them both healthy and quick, and then drizzled with a homemade maple glaze because who wants pancakes without some maple syrup?
I LOVE a good stack of pancakes but also who doesn’t want to be able to have donuts for breakfast?? Well now you don’t have to choose! I used my go to pancake and waffle mix for this recipe – Birch Benders Plant Protein – so these aren’t just healthy – they are packed with protein, they are vegan, and they are grain free??
I love making fun things with this mix because there is really so much you can do with it besides just making pancakes or waffles (which are also great)! And it can make baking so much easier.

Let’s Make Some Pancake Mix Donuts!
This recipe is literally too easy. Take your pancake mix, combine with your water, and then bake!
I like using my silicone mini donut pan. I love everything mini so that’s fun and then silicone donut pans make life SO much easier. Easier to clean and easier to get the donuts out in one piece!
Just bake them in your oven until they feel firm to the touch. Every oven is a little different any I swear mine has a mind of its own sometimes – but it took mine about 15 minutes. Keep in mind if you use a full size donut pan it will take longer! And they will rise a little so don’t fill the mold all the way to the top.
The glaze is super easy to whip together but it will be super sticky so just be prepared! Keep a napkin nearby while you eat, but I promise it is worth it 😉
In addition to the listed ingredients, you will need:
- a donut pan (I used a mini one and I recommend a silicone one)
- oil to grease your pan
- a cookie sheet to place it on (if using a silicone pan)
- a bowl and whisk or fork for the glaze

Ingredients
Donuts:
- 1 bag of Birch Bender Plant Protein mix
- 2 and 3/4 cup water
Maple Glaze:
- 4 tbsp maple syrup
- 1/2 cup powdered sugar
Instructions
- Mix the water and pancake mix together until combined. Pour into a greased silicone mini donut pan and bake at 350F for about 12-15 minutes, until firm to the touch.
- While the donuts are baking make the glaze by combining the maple syrup and powdered sugar. It will be sticky!
- Wait for donuts to cool completely before removing from donut pan. Then dip in the glaze and enjoy!
Notes
This is the mini donut pan I use! I love silicone because it makes it so much easier and less likely to break your donuts.
You can probably use any of the Birch Bender mixes for this! Just depends on preference and dietary needs 🙂
