Sometimes I want a warm cookie. But sometimes I just want to enjoy the dough straight from the jar. I know I can’t be alone in this right? This dough gives you a great option! Not only is this cookie dough safer, it is also so much healthier than edible cookie doughs you will gind in the store. What it does NOT have: gluten, dairy, soy, refined sugar, or oil. What is DOES have: a great source of plant based protein as well as fiber, plus a ton of chocolate chips and a whole lot of great flavor. Now doesn’t that sounds like a win-win??

Vegan Protein
Yes this is vegan, and yes it is full of protein. A lot of people have the misconception that it is hard to get protein on a vegan diet. But that is not the case! There are many options out there, and this utilizes on of my favorites: chickpeas. One cup of chickpeas contains a whopping 14.5 grams of protein. Let’s Make Some Vegan Cookie Dough!
This recipe is super easy to make. It requires no baking and only a handful of ingredients. You definitely are going to want a food processor or high speed blender though to be able to get it smooth enough.
Plus it is easy to customize to your preferences! Don’t like cinnamon? Leave it out. Would you rather have dried fruits or nuts than chocolate chips? Then go for it! You don’t have to follow this exactly, just use it as a starting point and a great way to get you the perfect consistency, and then switch up the add ins to make it perfect for YOU! Description
Gluten Free, Vegan, Refined Sugar Free
A cookie dough SO GOOD that you can eat without worrying because it is egg free. You can also be guilt free because it is protein packed, gluten free, and refined sugar free too!
Ingredients
- 1/2 cup gluten free oats
- 1 can chickpeas
- 1/2 cup pumpkin puree
- 1/2 cup cashew milk
- 1.5 tbsp cacao powder
- 2 tbsp chopped dates
- 1/4 tsp cinnamon
- 2 dashes nutmeg
- 2 – 3 tbsp agave
- Cacao nibs or dairy free chocolate chips
- Optional: 1 scoop Nuzest vanilla protein (use code DWBH15 for 15% off!)
Instructions
- Blend your oats, cinnamon, and nutmeg together to form a “flour” base in your food processor.
- Add the rest of your ingredients (except cacao nibs) to the food processor, blend until smooth!
- After you achieve your desired texture, mix in cacao nibs and eat out of the bowl because this cookie dough is edible without baking!
Notes
Nut Free Option – swap cashew milk for oat milk
If you use chocolate chips instead of cacao nibs, make sure you check ingredients for added sugar (there are many dark chocolate kinds you can get that do not have any)
