Plus, you only need 5 ingredients (two of which are just salt and pepper). This dish is sure to become a family favorite—who can resist cheesy potatoes?
Don’t be intimidated by hasselback potatoes like I was for so long. They’re actually super easy to make! I’ll walk you through the process in just a minute. But first, let’s talk about how to round out your meal.

Let’s Make “Cheesy” Hasselback Potatoes!
Okay like I said – hasselback potatoes are NOT hard. Just listen carefully! Hold your potato at one end, and gently slice thin sections about two-third to three-fourths the way down into the potato, leaving the base solid so they don’t fall apart. The thinner the better in my opinion. Just do that with each potato and voila!
You can use any vegan cheese to make this dish, but I used Zubiate’s Cocina’s queso de jalapeno. What is really cool about this brand is that it is not only vegan, but it is nut free as well! That is hard to come by with vegan quesos as they are usually cashew based. This one only has nine ingredients and they are all veggies, spices, and then some oil. I’d definitely recommend trying it out! Or if you are okay with nuts and want a homemade option, try my nut free vegan queso!
Also, I used avocado oil in this recipe. I recommend you do the same because you are cooking at high temperatures. Avocado oil has one of the highest smoke points (olive oil is rather low), so it is one of the healthiest oils to cook with at these types of temperatures. When oils reach their smoke point, they oxidize and become less healthy. I buy the Chosen Foods brand.

These hasselback potatoes are crisp on the outside, soft on the inside, oozing with melty cheese, and are VEGAN too! No one will ever guess this delicious side dish is completely plant based- they will be too busy digging in!
Ingredients
- White or sweet potatoes
- Avocado oil
- Salt
- Pepper
- Zubiate’s queso de jalapeno (or my homemade vegan queso)
Instructions
- Preheat oven to 400F.
- Cut your potatoes – hold at one end, gently slice thin sections 2/3-3/4 the way down into the potato, leaving a solid base.
- Place potatoes on cast iron skillet.
- Spray with avocado oil.
- Sprinkle with salt and pepper.
- TWO options:
- Bake for an hour and then remove and pour cheese over them, serve immediately
- Bake for 45 minutes, remove from oven and pour cheese over potatoes. Place back in the oven and bake for another 15-20 minutes (I like this one – makes the cheese kinda burnt!).

Check after 30 minutes, cook time will vary by oven.
