Vanilla Spice Walnut Butter

Homemade walnut butter is creamy and flavorful, made with only raw walnuts, vanilla extract, and spice.  No added sugars or oils and no baking required.  Enjoy it on top of breads, muffins, with fruit, or straight from the spoon.

I am a hugeeeee nut butter fan.  Give me a good peanut butter, almond, cashew, even mixed nut and seed (NuttZo has the best of this) and I am all about it.  But I never had walnut butter before!  Have you?  So with pounds of raw walnuts left over from a (somewhat silly) purchase, I decided to give it a try.  And who knew it was the easiest and most delicious thing ever??  I didn’t until now.  But it is.

In the meantime make this butter and enjoy it because it is oh so good.  Eat it on some triple chocolate avocado zucchini bread, maybe some banana nut muffins, or heck eat it off the spoon!  It won’t disappoint. Let’s Make Vanilla Spice Walnut Butter!

This recipe is SUPER simple.  All you need is some walnuts, some vanilla, and some spices, and you are ready to go!

I learned a fun thing about walnut butter while researching this type of recipe.  If you want a smoother butter that tastes pretty much exactly like eating a walnut, use raw walnuts.  If you want a pop of sweeter and nuttier flavors, but are okay with a more coarse end product, then toast your walnuts (you could probably do about 8 minutes at 350F from what I read).  I like mine smooth so I decided to go with raw.  Plus it takes out the step of cooking!  But it definitely just tastes like walnuts.  So that is why I added some fun flavors 🙂  but healthy flavors that contain NO added sugar!  So it’s good for ya too!

Be warned, you are going to run your food processor for a while on this one.  Like 5-10 minutes at least.  Don’t let yourself get discouraged and think it won’t turn into butter – it will!  You just gotta be patient.  Good things come to those who wait ya know?

You can also start small with the salt (or other spices) and taste and add more as you prefer.  It is totally up to you and your tastebuds.  You could even try some different spices if you want!  Maybe some ginger or cloves would be good…

Lastly, as you can see in my photos, this is more of a thick spread than a drippy nut butter.  I didn’t try but maybe if you process it REALLY long, it’ll get thinner.  I also didn’t try this but you could add some coconut oil to the mix and see if that thins it out if that is what you are going for.  But I think it is perfect as is!

In addition to the listed ingredients, you will need:

  • a food processor
  • something to scrape the sides down
  • something to store it in

And that is it!  Who knew it was so easy to make your own walnut butter??

Gluten Free, Vegan, Refined Sugar Free

Homemade walnut butter is creamy and flavorful, made with only raw walnuts, vanilla extract, and spice.  No added sugars or oils and no baking required.  Enjoy it on top of breads, muffins, with fruit, or straight from the spoon.


Ingredients

Scale
  • 3 cups raw shelled walnuts
  • vanilla extract
  • cinnamon
  • nutmeg
  • salt

Instructions

  1. Blend everything in your food processor, scraping down sides periodically, until a butter forms (it takes a little while so be patient – it is working!)

Notes

If you want a sweeter/nuttier taste but a coarser butter, use toasted walnuts by baking in the oven at 350F for about 8 minutes.
