Tomato Basil Waffles

Plant based SAVORY waffles when your morning is calling for something extra.  These tomato basil waffles are made easy thanks to a clean mix, but definitely add a special something to your weekend brunch.

Calling all my fellow brunch lovers – this one is for you!  I love these waffles because they are SO easy to make – thank you Birch Benders for your incredibly clean but delicious mixes – and they really take your breakfast up a notch.  Savory waffles add something different to the mix when your guests are expecting a traditional spread.  I am a sweets gal through and through but this recipe has won my heart and I think it will win yours too.

Let’s Make Tomato Basil Waffles!

So first and foremost you gotta get your hands on some of Birch Bender’s plant protein waffle mix.  It is beyond delicious and it is what makes this recipe so incredibly easy.  I haven’t tried this with any other waffle mix so I can’t give you subs – but if you have another you like you can definitely try that too!

Then we add flour.  I know this might seem weird but the first time I made these I ran out of waffle mix and needed a little more something to hold these together, so I added a couple tablespoons of whole wheat flour.  And I am a creature of habit and hate to leave a good breakfast to chance, so I have just stuck with making it this way.  BUT I am almost sure that using extra mix would still work.  So if you don’t want to enter another ingredient into the equation, just use extra mix.

After all of that is figured out you just add some water, spices, and some tomato paste! Do NOT add more than 3 tbsp of tomato paste.  You can even taste it after 2 and see if you think the flavor is strong enough.  The more tomato paste you add the denser these get and when I tried anything more than 3 tbsp they just didn’t crisp up well enough.

In addition to the listed ingredients, you will need:

  • a waffle maker
  • spray avocado oil (or coconut oil) to grease your waffle maker

Plant based SAVORY waffles when your morning is calling for something extra.  These tomato basil waffles are made easy thanks to a clean mix, but definitely add a special something to your Sunday brunch.


Ingredients

Scale
  • 1/2 cup Birch Benders plant protein mix
  • 2 tbsp whole wheat flour*
  • 1/2 cup water
  • 3 tbsp tomato paste
  • 1 tsp basil
  • 1.5 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper

Instructions

  1. Combine all ingredients together in a large bowl, mix until well combined.
  2. Cook in your waffle maker according to directions until crispy and delicious!

Notes

*When I made this I did 1/2 cup mix and 2 tbsp of flour because I had used up the last of my mix 🙂 while I haven’t tried it myself, you can probably just use 1/2 cup + 2 tbsp of mix and nix the flour to keep ingredients to a minimum!

You can add more basil (or other spices) to taste – these are vegan so you can taste the batter safely!
