Not Your Average Pancake Recipe

Who doesn’t love a stack of warm pancakes in the morning?  I can’t argue with that.  But maybe you don’t like having to make them on the stove top, usually one by one, and then get all that sticky maple syrup all over you (especially if you are feeding kids).  That is where these syrup infused pancake poppers come in!  They are easy to make ahead of time and warm up for a quick breakfast, you can make a whole bunch at once, and they have the syrup baked right in!  Oh, and these are vegan pancakes too.

I love these because they are this unexplainable amazing texture that is somehow a mixture of dense and fudgy yet light and fluffy at the same time.  I know it doesn’t make sense but trust me and when you try it you will not regret it.  You can eat them hot or cold, but I prefer them warmed up.  And with some chocolate chips in them too 🙂

I used a Birch Benders mix for this recipe to make it super easy.  If you want to try another recipe with their mix you should check out my fresh peach paleo pancakes.  If you want a super easy pancake recipe that does not require a mix, try my two ingredient pancakes.  Then to finish off your brunch menu with something savory, go check out my bacon breakfast pie and my egg white muffins.

Let’s Make Syrup Infused Pancake Poppers!

The best part about this recipe is that you really cannot mess it up.  All you need to do is go get yourself some Birch Benders Plant Protein Pancake mix, make sure you have some good maple syrup, and access to water – that’s it!

The first time I made these I added some baking powder.  I was scared using maple syrup would make them too dense, and I do think the baking powder fluffs them up a little bit, but the difference is negligible.  So you can decide if you want to include that or not!

Quick trick – if you only have a 12 count muffin pan, just fill the six extra tins with a little water, this helps ensure equal baking.

Lastly – feel free to have some fun and add some extra goodies!  I made half of mine with chocolate chips and of course those were amazing.  You could also do blueberries or nuts or something else that sound good to you!

In addition to the listed ingredients, you will need:

  • a 6 or 12 count muffin pan
  • oil to grease your pan
  • a mixing bowl
  • a fork or whisk to stir

I hope you make these as part of a wonderful brunch!

  1. My kids could not get enough of these pancake poppers. They are already asking me to make them again on Saturday.

  2. This might be the best thing I’ve ever seen! I love the idea of pancake muffins with everything already inside them!

  3. Easy and delicious! My family loved these for breakfast! Thank you!

  4. We literally live next door to my daughter’s school, and yet somehow she manages to be late every day because she’s a slow eater (and because she’s 12). She will love these because she can eat them while she’s walking over there!

  5. These are fantastic! My grandkids are going to love making and eating these.

  6. These are so cute, fun, and awesome! We all loved them, especially my kiddo. Will definitely be making these again.
