Not Your Average Pancake Recipe
Who doesn’t love a stack of warm pancakes in the morning? I can’t argue with that. But maybe you don’t like having to make them on the stove top, usually one by one, and then get all that sticky maple syrup all over you (especially if you are feeding kids). That is where these syrup infused pancake poppers come in! They are easy to make ahead of time and warm up for a quick breakfast, you can make a whole bunch at once, and they have the syrup baked right in! Oh, and these are vegan pancakes too.
I love these because they are this unexplainable amazing texture that is somehow a mixture of dense and fudgy yet light and fluffy at the same time. I know it doesn’t make sense but trust me and when you try it you will not regret it. You can eat them hot or cold, but I prefer them warmed up. And with some chocolate chips in them too 🙂

Let’s Make Syrup Infused Pancake Poppers!
The best part about this recipe is that you really cannot mess it up. All you need to do is go get yourself some Birch Benders Plant Protein Pancake mix, make sure you have some good maple syrup, and access to water – that’s it!
The first time I made these I added some baking powder. I was scared using maple syrup would make them too dense, and I do think the baking powder fluffs them up a little bit, but the difference is negligible. So you can decide if you want to include that or not!
Quick trick – if you only have a 12 count muffin pan, just fill the six extra tins with a little water, this helps ensure equal baking.
Lastly – feel free to have some fun and add some extra goodies! I made half of mine with chocolate chips and of course those were amazing. You could also do blueberries or nuts or something else that sound good to you!
In addition to the listed ingredients, you will need:
- a 6 or 12 count muffin pan
- oil to grease your pan
- a mixing bowl
- a fork or whisk to stir

Ingredients
- 1 cup Birch Benders Plant Protein Pancake Mix
- 1/2 cup water
- 1/2 cup maple syrup
- 1/2 tsp baking powder (optional)
Instructions
- Preheat oven to 375F.
- Combine all ingredients in a mixing bowl and stir to combine.
- Pour evenly into a greased muffin tin.
- Bake for 15 minutes.
Notes
Baking powder is optional – I think it might give the recipe a little more lift but it is negligible.
