Sweet & Sour Air Fried Cauliflower Gnocchi

This sweet and sour cauliflower gnocchi is a real take out fake out.  Super crispy gnocchi, smothered in a fresh, refined sugar free, sweet and sour sauce, all atop a bed of some fried rice.  Get your fix without the guilt!

Sweet and sour chicken has always been one of my favorite meals to order when I get Chinese takeout.  The sauce is so good and it’s crispy and delicious so I decided to play with making my own.  While this could be made with chicken, I decided I wanted to do something a little more fun.  And since cauliflower gnocchi is basically taking over the world I decided to give it a go with this.  And I am excited to add this dish to my list of fun ways to use it!

Let’s Make Some Sweet & Sour Cauliflower Gnocchi!

First you are going to air fry your gnocchi.  If you have some freezer burn on your gnocchi I like to microwave it for a minute or two first until that melts away, but otherwise, you can throw it straight in!  I just spray mine with a little avocado oil and I always open it and shake them around halfway through.

While the gnocchi is cooking, you will make your sauce.  To keep this refined sugar free, you will need to use a brand of ketchup that does not have added sugar.  Or you could always make it with a batch of my homemade Whole30 ketchup! I would also warn you to start small with the pineapple.  The first time I made this I put half the jar in the sauce and it was wayyyy too pineapple-y.  So stick to the measurements below on that part for sure. Blend everything together in a food processor and then heat it on the stovetop to thicken it up.

Then you have two options.  The first time I made this I just took the cooked gnocchi and poured it into the sauce.  Delicious, but it doesn’t stay as crispy as like my buffalo gnocchi does.  If you want it to be a little more crispy take the gnocchi out and dip in the sauce and then put it back in the air fryer for a few more minutes.  Then you can pour just a little more sauce on top to get all the flavor but while keeping it crispy.

Then for the ultimate take out experience eat it on top of some cauliflower fried rice!

This sweet and sour cauliflower gnocchi is a real take out fake out.  Super crispy gnocchi, smothered in a fresh, refined sugar free, sweet and sour sauce, all atop a bed of some fried rice.  Get your fix without the guilt!


Ingredients

Gnocchi:

  • 1 bag Trader Joe’s cauliflower gnocchi

Sweet And Sour Sauce:

  • 1/3 cup ketchup
  • 1/4 cup pineapple
  • 1 tablespoon tamari or soy sauce
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon apple cider vinegar

Instructions

Fry the Gnocchi:

  1. Air fry that is!  This time I didn’t microwave beforehand because my gnocchi wasn’t freezer burnt.  I just tossed the gnocchi straight in the air fryer, no oil, and cooked at 400F for 10 minutes, shaking halfway through.

Start the Sauce:

  1. While gnocchi is cooking, combine all sauce ingredients in your food processor and blend until smooth.
  2. Transfer it to a sauce pan and cook over low heat to warm up.

Combine:

  1. After 10 minutes in the air fryer, remove the gnocchi and dip them in the sauce, and then return in the air fryer for about 5 more minutes to bake the sauce in and keep them crispy.

Finish:

  1. When gnocchi is done air frying again, you can serve!  You will want to drizzle the additional sauce over the gnocchi to give it more flavor, but keep in mind the more you pour on the less crispy it will be (but still delicious!)
  2. I served mine over some fried cauliflower rice.

Notes

You can sub soy sauce or coconut aminos for tamari, depending on preference and dietary restrictions

You can use fresh pineapple just use thin slices.  Start small and add more – it gets pineapple-y quickly!
