I loveeee a good homemade brunch.  It is one of my new favorite things.  I can make cook exactly what I am craving, make my mimosas just the way I like them (champagne with just a splash of OJ) and save a whole lot of money while I am at it.

These sweet potato nests are so fun for brunch or breakfast!  They are really impressive to serve friends and they satisfy the sweet and savory lovers all in one dish.  Plus they are super easy!  If you grate your sweet potato ahead of time you could even use this as a pretty simple meal prep.

Now Let’s Make Sweet Potato Nests!

These are soooo easy.  All you have to do is grate some sweet potato and crack an egg without breaking it.  I recommend using a larger grate so you have bigger pieces. You could also use a spiralizer and use sweet potato noodles instead.

And if you are looking for the highest quality egg, go for pasture raised.

Besides those two ingredients we just have spices!  You can play with these however you want but I recommend my favorites below.

Sweet potato nests are a great at home brunch dish, combing sweet and savory flavors for a quick and easy satisfying meal.


Ingredients

Scale
  • 1 large to medium sweet potato
  • 4 eggs
  • Seasonings to taste:
    • Pepper
    • Salt
    • Cayenne
    • Garlic Salt
    • Red pepper flakes
    • Trader Joes Everything But the Bagel (always a winner!)

Instructions

  1. Grate your sweet potato into long strands.
  2. Cook on stove with salt and pepper until soft.
  3. Build four small “nests” with the sweet potatoes.
  4. Make a hole in the middle of each nest.
  5. Crack and egg into the hole.
  6. Cover and cook until egg white has solidified but yolk is still runny (about 10 minutes).
  7. Sprinkle with red pepper flakes or desired spices.

Notes

You can also spiralize your sweet potatoes instead of grate.  This is the spiralizer I recommend.
