I love spaghetti squash so much. I actually think I prefer it to zucchini noodles which is a big statement because those used to be my favorite thing ever. I actually decided to make this recipe the morning after we had my sloppy joe stuffed spaghetti squash for dinner (seriously this might be my favorite dinner on the blog I highly encourage you to check it out). I figured it would be a great way to use up our leftover squash and who doesn’t like a fun Sunday brunch??
This recipe is so fun because it is SO SIMPLE yet it is so tasty. I really love eating these waffles all by themselves!

Let’s Make some Spaghetti Squash Savory Waffles!
Okay so once you have some prepared squash this recipe is SUPER easy. If you don’t – do that first (instructions linked above).
Then you will just take an egg and your spices, whisk them up in a bowl, add in your squash, and put them on your waffle maker!
I am a firm believer that any food is tastier in mini form 😛 so I used my mini waffle maker for this recipe. It made three waffles just about perfectly (the last one was a little bigger than the first two) and I say it serves one! Or at least I ate these all in one serving and did NOT want to share!
These are honestly REALLY good all by themselves! If you want a super easy topping throw some everything but the bagel seasoning on them (make anything better I swear). In the photos I served them with the seasoning and pepper jelly to top. I have also loved adding avocado, hot sauce, and/or a fried egg!
In addition to the listed ingredients, you will need:
- a mini waffle maker (duh!)
- a small mixing bowl
- a fork to combine everything with
And if you need some dishes to complete your brunch I highly recommend my bread pudding breakfast bake, my flourless sweet potato protein waffles, or my egg muffins!

Ingredients
- 1 egg
- 1 heaping cup of prepared spaghetti squash
- 1/4 tsp garlic powder
- 1/4 tsp black pepper
- 1/8 tsp salt
Instructions
- If you are starting with a raw/whole spaghetti squash reference my post How To Make the Perfect Spaghetti Squash to help you cook it.
- Take your egg and spices and combine in a small bowl. Add your prepared squash and stir until well combined.
- Then just cook on a greased waffle maker (I used my mini waffle maker)
- Top however you’d like
Notes
I think these are SO good simply by themselves, but some other topping ideas include: pepper jelly and/or everything but the bagel seasoning (photographed), smashed avocado and hot sauce, a fried egg, or use them as a buns for a breakfast sandwich!
