Sloppy Joe Stuffed Spaghetti Squash

Sloppy joe stuffed spaghetti squash is made using lean ground turkey, a sauce made from homemade ketchup and coconut aminos, all laid atop a bed of veggie noodles to make your childhood favorite just as delicious but a whole lot healthier.

Healthy and Sloppy Joe

Traditional sloppy joes, while delicious, can be something we may only want to indulge in once in a while.  Store bought sauces are usually packed with added sugar and weird additives, they are usually made with a fatty cut of meat, and then layered on with white buns full of refined and processed carbs.  This sloppy joe takes it to a whole new level.

Here we use lean ground turkey to provide a clean source of protein, a sauce made with coconut aminos and homemade ketchup that has ZERO refined sugar, and I top this sloppy joe mix on a big bed of spaghetti squash – keeping it low carb, low calorie, and nutrient dense.

And, for any of you that may be interested in this, this recipe is 100% Whole30 approved!

Let’s Make Sloppy Joe Stuffed Spaghetti Squash!

The hardest part of this recipe is just getting the spaghetti squash ready.  Really only cutting it 😛 they can be hard.  But I have a post on how to cook a spaghetti squash that gives you a tip to make it easier, so be sure to check that out.  And then cooking the squash is the most time consuming part, but you can always do other things or prepare the sloppy joe while you wait!

After you make your sauce, go ahead and taste it.  If you think it is too liquidy, you can add more tomato paste or let it simmer longer.  If you think it is too “ketchup-y” you can add more coconut aminos.  Play around with it until you get it exactly how you want it!

Feeding more than two?  Feel free to eat this as a deconstructed stuffed spaghetti swuash.  aka – remove the squash from the skin and serve it on plates 😛  There will be plenty of food from this recipe to serve up to four people, so you can definitely do it that way if you are feeding a crowd or just prefer your food on a plate!

In addition to the listed ingredients, you will need:

  • a cookie sheet to cook the squash
  • a skillet for the sauce
  • a spatula
  • a knife
  • a fork to make squash “noodles”

Gluten Free, Dairy Free, Refined Sugar Free

Sloppy joe stuffed spaghetti squash is made using lean ground turkey, a sauce made from homemade ketchup and coconut aminos, all laid atop a bed of veggie noodles to make your childhood favorite just as delicious but a whole lot healthier.


Ingredients

  • 1 lb of fat free ground turkey
  • 1 red pepper, diced
  • 1 yellow onion, diced
  • 1 cup of (Whole30 approved!) homemade ketchup (get recipe here!)
    • OR if you do not have the time to make your own ketchup, I have also used this one which is also sugar free and Whole30 compliant
  • 1/4 cup coconut aminos (we used this one!)
  • 2 tbsp tomato paste
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper

Instructions

  1. Cook your spaghetti squash according to these instructions.  While squash is cooking, prepare sauce:
  2. Dice both your pepper and onion.  Saute on stove top (using coconut oil or avocado oil) until soft and fragrant.
  3. Add ground turkey, garlic powder, onion powder, and pepper to pan,  cook until turkey is done (no pink areas remaining).
  4. Complete your sauce by adding your homemade ketchup, coconut aminos, and tomato paste.  Stir until combined.
  5. Simmer for 5-10 minutes to allow flavors to combine and sauce to get warm.
  6. When squash is done, remove from oven and string to make the “pasta” but leaving it inside the skin (to have a stuffed bowl of course! – you can also move to a plate if you would rather).
  7. Fill each half with as much sloppy joe as you would like, and eat up!

Notes

You can really use any ketchup that you want for this recipe, just be aware that traditional ketchups have added sugar and other ingredients and are not Whole30 compliant
