I love all things banana bread. I mean who doesn’t?! The perfect treat for when you have bananas about to go bad. But what about when you have only one?! Because let’s be real. I totally understand forgetting about your bananas and having them get too ripe. But who buys a bunch of bananas and lets ALL of them go bad? Nah. Usually it is one or maybe two. So that is where this recipe comes in. This one-banana banana bread is perfect for a single serve dessert. Which brings me to my next favorite topic:

Let’s make a One-Banana Banana Bread Dessert!
As I start off every tip list with recipes that use grain free flours – do not try to mess with the ratio or types of flours used in this recipe. Or at least if you do, know that I can not guarantee success of the result because I have not tried it any other way. Almond flour and coconut flour are both so weird (for lack of a better word) so you cannot just swap other flours in a 1 to 1 ratio. So stick to the recipe for this one if you can!
However I will say, the one beauty of a skillet recipe is that if it is a little crumbly or a little too soft it is okay, because it isn’t a loaf of bread that needs to stand on its own. You just eat it straight from the skillet!
The sweetener you can feel free to swap out or omit completely – that one is up to you. It won’t really mess with the structure of your banana bread and I personally think the banana is enough to sweeten this dessert if you aren’t looking for anything over the top sweet. Up to you!
And lastly, I didn’t even grease the skillet for this one – again because I just enjoyed with a spoon – so feel free to skip that step too!
And actually one more thing- the ice cream you see mine with is actually a local Atlanta dairy free gelato called Revolution Gelato. And this was their cardamom spice flavor – highly recommend adding this or your favorite ice cream to the warm bread for that a la mode feel!

This one-banana banana bread recipe is fluffy and moist, made healthier using almond flour and is refined sugar free. It is made in a cast iron skillet and is the perfect single serve dessert!
Ingredients
- 1 ripe banana
- 1 egg
- 1 tbsp coconut oil, softened.
- 1/4 cup almond flour
- 1/2 tbsp Stevia
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- dash of salt
Instructions
- Preheat oven to 375F.
- In a small mixing bowl, mash your banana until minimal lumps remain.
- Whisk in your egg and your coconut oil.
- Then add in your dry ingredients (flour, Stevia, cinnamon, baking soda, salt).
- Pour into a small cast iron skillet.
- Bake for 25-30 minutes until edges are golden brown and center is firm.
