I met the Karma Nuts team at Expo East this year and immediately fell in love with their products. Cashews are one of my favorite nuts because they are high in healthy fats, a great source of protein, and also contain a good amount of zinc which is important for immune function and a lot of us are deficient in. Plus they are so versatile. You can make a great vegan queso with them, cashew milk is by far my favorite nut milk, and of course you can enjoy them all on your own. Karma Nuts has a ton of different flavors of cashews (think cinnamon, matcha, lime, and more) and today I made this recipe with one of my favorite – their cocoa dusted cashews! Because who doesn’t love chocolate?
Neil ate about three of these in one sitting when I first let him try them so rest assured they are definitely husband approved and I know they will be kid approved too!
Let’s Make Salted Chocolate Cashew Oatmeal Cookies!
These cookies are super easy to make. I haven’t subbed any of the ingredients below, but if you need a gluten free option your best bet would be to do a one for one swap for gluten free all purpose flour. And if you don’t have sea salt at home you can use Karma Nuts’ salted cashews for that salty taste. Lastly, for a refined sugar free option, you can probably sub the brown sugar for brown coconut sugar and be just fine!
When you take these out of the oven they will still be soft but I promise that is how you want them. They will continue to cook while they are on the pan (so don’t take them off til they have cooled most of the way) and it makes for a superrrr soft and chewy cookie.
In addition to the listed ingredients, you will need:
- 2 large mixing bowls
- 1 cookie sheet
- parchment paper
- a whisk and spoon
- a baggie and a utensil to crush cashews into smaller chunks

Salted chocolate cashew oatmeal cookies are soft and chewy, sweet, and salty, and have the perfect nutty crunch. Made healthier using real cashews, whole wheat flour, reduced sugar, and whole grain oats.
Ingredients
- 1 cup whole wheat flour
- 1 cup oats
- 1/2 cup Karma Nuts dusted cocoa cashews
- 1/2 cup brown sugar
- 1 tbsp cocoa powder
- 1 tsp cinnamon
- 1 tsp baking soda
- 1/4 tsp salt
- 2 eggs
- 1/4 cup agave
- 2 tbsp coconut oil, melted and slightly cooled
- Sea salt
Instructions
- Preheat oven to 350F.
- Combine dry ingredients (flour through salt), except cashews, in a large mixing bowl, and whisk until combined.
- Crush the cashews into small pieces, and then mix into dry ingredients.
- In another bowl, combine eggs, agave, and coconut oil until mixed.
- Add wet ingredients to dry, and stir until combined.
- Divide into 12-16 cookies (will depend on size you make), lay on a cookie sheet lined with parchment paper, sprinkle sea salt on top, and bake for 15 minutes.
Notes
Your cookies will still be soft when they come out, that is okay! They will harden as they cool and you want these to be nice and soft when you eat them!
