Imagine your favorite chocolate cookie in the whole entire world. Now imagine it filled with creamy, ooey gooey caramel. We aren’t done. Now imagine that topped with a few flakes of sea salt. We are talking DESSERT HEAVEN with this one and I promise you no one will EVER even think to guess that these are healthy.
But they are 🙂 The cookies are made with almond flour, the caramel is made with tahini, both are sweetened with agave and no added sugar, and they make the perfect combination to satisfy any sweet tooth!

Let’s Make Some Salted Caramel Chocolate Thumbprint Cookies!
Okay so are you ready to make THE MOST DELICIOUS cookie you will ever taste?? Okay great. So lets get to it. All you gotta do is mix your dry ingredients separate from your wet, combine, and boom! Ready to go to dessert heaven.
I will make one point – and I don’t know if this is weird so sorry if it is – but I measured my butter after melting it. So when you go for that 1/3 cup, that measurement is of your melted butter, not before.
I just eye balled how much dough I took to form each cookie, trying to make them similar, and I made 15. It worked out perfectly, they were a great size and one batch of my caramel filled them just perfectly!

One more note about the caramel. In the directions on that post I say to let the caramel cool and then add salt to it. But in this recipe I actually just waited and did not add salt until it was in the cookie and I topped them. That is because I wanted it to be runny enough to get in there easily. Either way will work but just a tip!
Lastly – don’t over-bake the cookies! I am so bad at that. Pro at burning cookies over here. You just want the edges to be golden brown (I know that is a little hard with chocolate cookies but just look closely!) And you can feel them to see if they seem sturdy or still super doughy. They will continue to bake more once you take them out while they are still on the cookie sheet.

Creamy salted caramel tucked into a chewy chocolate cookie makes for the ultimate dessert time win. No one will know the cookies are made with almond flour, the caramel is made with tahini, and these are actually healthy!
Ingredients
Cookies:
- 2 cups almond flour
- 1/4 cup cocoa powder
- 1/4 tsp salt
- 1/3 cup melted vegan butter
- 1/4 cup agave
Caramel:
- 1 batch of my easy tahini vegan salted caramel
Instructions
Cookies:
- Preheat oven to 375F.
- Combine the flour, cocoa powder, and salt in a mixing bowl.
- Melt your butter in a microwave safe bowl (measure after already melted), and then add agave and mix.
- Add your wet ingredients into your dry and stir until a dough forms.
- Make small balls with the dough (I made 12 cookies) and place on a cookie sheet lined with parchment paper, creating a well with your thumb.
- Bake for 10-12 minutes (depending on your oven) until edges start to turn golden brown.
- Make your sauce while the cookies are baking, leave it over low heat (to keep it thin – easier to pour into cookies), and then pour into each well once the cookies are done.
- Top with flaky sea salt
Notes
One batch of caramel worked basically perfectly for me to make these cookies! You might have a little left over, but that just means a treat for the chef 🙂
