Freshly roasted red bell peppers, added to a bunch of pantry staples makes this romesco sauce an easy homemade recipe that is flavorful and the perfect pairing for just about anything. Serve it on chicken, over pasta, or even use it as a dip!
What is romesco sauce and what do you put it on you may be asking? Really the question is what CAN’T you put it on?! This is one of my favorite summertime sauces filled with so many great fresh ingredients and it pairs well with so many things. Think chicken, pasta, potatoes, brats, veggies, burgers, anything you can put on a grill. The world is your oyster when it comes to this one!

Ingredients for Romesco Sauce:
- Red bell peppers – I used fresh bell peppers because I was feeling fancy, and I roasted them on my stove. But you can definitely used jarred roasted bell peppers if you want to skip that step!
- Almonds – almonds add texture and help make the sauce thicker. Also add some great healthy fats that make the sauce overall more satisfying too!
- Tomato paste – can’t have romesco sauce without tomatoes! I went the easy route and used the paste 😉
- Olive oil – makes the sauce super creamy.
- Lemon juice – acidity adds a great depth/contrast to the flavor.
- Spices – I used some fresh parsley (but you could also use dried), as well as garlic, paprika, and sea salt to add a great depth of flavor to the sauce!
Tips for the Perfect Romesco Sauce:
- Don’t have a lot of time or just feeling lazy? Use canned roasted red peppers! Save you a few steps and I know sometimes that can be a life saver!
- Or the opposite – if you are feeling fancy – you can sub the tomato paste for some fresh tomatoes for a super fresh feel! I recommend plum tomatoes.
- The sauce will be thick at first – if you want it to be thinner just add more oil!

Freshly roasted red bell peppers, added to a bunch of pantry staples makes this romesco sauce an easy homemade recipe that is flavorful and the perfect pairing for just about anything. Serve it on chicken, over pasta, or even use it as a dip!
Ingredients
- 2 red bell peppers
- 1/2 raw almonds
- 1/4 cup tomato paste
- 1/4 cup olive oil
- 1 tbsp parsley (fresh or dried)
- 2 tsp lemon juice
- 1 tsp minced garlic
- 1 tsp smoked paprika
- 1/2 tsp sea salt
Instructions
- Roast your red peppers – on the stove top, turn the flame to medium heat, and place your pepper directly over the flame on the grate. Let cook, flipping every 3-4 minutes with tongs, until it is nice and charred and soft to the touch on all sides. If you don’t have a gas stove, you can also do this on a grill pan, it just might take a little longer!
- Once peppers are done, let them cool a little and then remove skins, de-seed, and slice. It is okay if you don’t get all of the skin, I like having a little bit of the char flavor in there!
- Combine all ingredients in your food processor, blend until smooth. It will be a little thick and chunky (best for sammies, chicken, veggies, etc), if you want it thinner, add more oil until you get a consistency you like (best for pasta and pizzas)
Notes
You can also use canned roasted peppers if you don’t want to roast your own.
