Red Velvet Cake Mix Cookies

These red velvet cake mix cookies are an easy way to turn a box of cake mix into delicious, crave-worthy cookies! You only need a few ingredients to make this tasty treat.

Ingredients

  • Red Velvet Cake Mix– You need an 15.25 oz box of cake mix. I used Dunkin Heins red velvet cake mix but you can use any brand. Just make sure it’s an 15.25 oz box that makes a standard 9×13 cake.
  • Oil– You’ll need a little oil or melted butter. I used vegetable oil but any neutral oil such as avocado oil or canola oil will be fine.
  • Eggs– You’ll need 2 eggs to help bind the cookies and add moisture.
  • Powdered sugar– A sprinkle of powdered sugar mimics the look of frosting for an easy way to make these cookies even better!

What does red velvet cake taste like?

Red velvet cake has a mild chocolatey taste. It’s sweet and typically served with cream cheese frosting. These red velvet cake cookies have the same cake flavor but in cookie form. I skipped the cream cheese frosting and used a sprinkle of powdered sugar instead since these cookies are pretty sweet, and I didn’t think they needed a frosting.

How to Make Cake Mix Cookies

  • ck and slightly sticky. The cookies won’t spread a lot because they’ll have a slightly cakey texture.
  • I recommend using parchment paper on your baking sheet to prevent the cookies from sticking.

Variations

Feel free to frost these with cream cheese frosting for a red velvet cake twist! These cookies are also great with white chocolate chips. They add sweetness and a nice texture. We’ve also used these cookies for ice cream sandwiches, and they’re delicious! If you love these cookies, be sure to try these Funfetti cake mix cookies or my brownie mix cookies!

How to Store Leftover Cookies

These cookies are best the day they’re baked but they’ll last up to 3 days in an airtight container. After a few days, they’ll start to dry out so I recommend enjoying them sooner rather than later. You can also store baked cookies in the freezer for up to 1 month.
