Pumpkin Spice Latte (Doubles as Coffee Creamer!)

Get your pumpkin spice latte fix, without the Starbucks price tag, or the Starbucks calorie content.  You can stay snuggled up in your favorite blanket and remain the comfort of your own home and still have an incredibly morning caffeine boost to sip on.  More time for snuggling on a cold fall morning, what is better than that??  Plus this means no need to feel like you have to get out of your yoga pants or put on real clothes and makeup because you are going out in public.  So many great qualities!

Not a latte drinker?

If you usually opt for your coffee black, but want to take a fun fall spin on your cup of joe to get in the holiday time spirit, the best part of this recipe is that it can double as a coffee creamer!  It is milk based, as are most creamers, so you can make the entire batch but then use just a tablespoon or two, however much you want to get the taste and consistency you desire.  And then just keep the leftovers in the fridge for the next morning!

Don’t Do Dairy?

If you are lactose intolerant, or just prefer to avoid dairy, that is okay too!  With this recipe you can easily swap out the milk for your favorite soy or almond milk, and it will be just as good.  No dietary restrictions can stand in your way of enjoying this enhancement to your morning.

Easy As (Pumpkin) Pie

The last great thing I need to mention about this recipe is that it is so incredibly easy.  It only includes a few ingredients, and about one, maybe one and a half, steps.  I know I am not a functioning human being (or a nice one) before I have my first cup of coffee in the morning, so I would never want to suggest something that will keep you from yours!

Pumpkin Spice Latte


Ingredients

  • pumpkin spice coffee creamer1 cup Fairlife fat free milk
  • 1 tbsp pumpkin puree
  • 1 tsp pumpkin pie spice
  • 1/4 tsp Whole Earth Baking Blend

Instructions:

  1. In a small sauce pan over low heat, whisk together all ingredients until no lumps remain and milk is warm.
  2. Use 1: Take one or two tablespoons and add to a cup of coffee to use as a creamer.
  3. Use 2: Use entire batch and add to a cup of coffee for a “latte”
  4. Use 3: If you are lucky enough to have your own espresso machine at home, add the whole batch to 1-2 shots of espresso and have a real latte!
