How To Make Oatmeal Raisin Cookies

- unsalted butter
- sugar
- brown sugar
- large eggs
- vanilla
- cinnamon
- baking soda
- salt
- flour
- quick oats
- raisins
- nuts (optional)

Cream together the butter and sugars. Add in egg and spices. Combine with flour, oats and raisins – mixture will be thick, you may need to use those muscles and dive in by hand!
Bake at 350 degrees for 10-12 minutes, until edges are golden. Allow to cool – enjoy!
Variations To Make The Best Oatmeal Raisin Cookies
- If you aren’t a huge fan of raisins, you could always substitute in dried cranberries or cherries. Or you could leave it out all together and sub in chocolate chips for an easy and delicious chocolate chip oatmeal cookie. You could go a step further and use chocolate covered raisins.
- You can lightly toast the oatmeal for about 8-10 minutes before adding into your dough. You want it to get light golden and fragrant.
- For the adults, soak the raisins in a small amount of dark rum while you prepare the dough. Add the raisins as the final step before baking.

- 1 cup unsalted butter (softened)
- 3/4 cup granulated sugar
- 1 cup firmly packed light brown sugar
- 2 large eggs
- 2 teaspoons vanilla
- 2 teaspoons cinnamon
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups all purpose flour
- 3 cups quick oats
- 1 cup raisins
- 1 cup chopped nuts (pecans or walnuts) (optional)
Instructions
- In the bowl of a stand mixer, cream together the butter and sugars.
- Mix in the eggs, vanilla, cinnamon, and salt.
- In a seperate bowl, combine the baking soda, flour, and oats. Add the dry ingredients to the wet.
- Fold in the raisins and nuts, if using. The mixture will be thick, you may need to use those muscles and dive in by hand!
- Bake at 350 degrees for 10-12 minutes, until edges are golden.
