Hands in the air if you love ice cream as much as I do!!!
Growing up ice cream was actually never my go to. It wasn’t until after college I decided to become obsessed with it. And while I do loveeeee me some traditional dairy-full ice cream, my stomach doesn’t. I always end up looking like I am nine months pregnant and feel like my stomach hates me once I am done eating it. Not cool. So I decided to jump on this nice cream train and WoWowowWow I am glad I did! This turned out SO FLIPPING CREAMY. Like way better than I ever could have imagined. And I love me some cookie dough so finding a fun healthy way to incorporate that just made it ten times better. And then adding nut butter speaks for itself!
So What Is It?
If it’s not cookie dough and it isn’t ice cream, what the heck is it? Fair question.
If you haven’t hear of “nice cream” it is basically a vegan and healthier alternative to ice cream, made with frozen bananas. So that is the base of this recipe. Then I add in some cashew milk, still vegan and dairy free, to make it extra creamy and softer. After that I added some nut butter (you can use regular or powdered peanut butter, I can’t decide which way I like it better so I suggest trying both or just using whatever is easiest for you!) – this step makes it taste more like peanut butter ice cream and less like just eating a cold banana. Lastly, I chopped up some NuttZo Bold Bitez and folded them in. Tastes JUST LIKE eating cookie dough ice cream. I am not kidding! All of this greatness in only four vegan, healthy ingredients. So healthy you can eat this for breakfast! My kind of ice cream cone.
Let’s Make Some Cookie Dough Nice Cream!
My only tip I think you’ll want for this one is to let you know that you can add more powdered peanut butter or nut butter if you want a stronger flavor. Try it after adding two tablespoons and see how you like it. If you think it still tastes too much like banana, then add more! I think the powdered PB is more easily mixed in, but I know a lot of us don’t have that on hand and regular nut butter works great too!
So now that the weather is warming up and is (hopefully) here to stay, I recommend you making yourself a big batch of this to hold on to for a refreshing treat!

Ingredients
- 4 ripe bananas
- 2 tbsp cashew milk
- 2 tbsp powdered peanut butter (or nut butter)
- 2 NuttZo Peanut Pro Collagen Bold Bitez
Instructions
- Unpeel bananas, chop into small pieces, freeze overnight.
- Put frozen bananas in food processor and start blending.
- Add milk one tablespoon at a time until the bananas blend smooth.
- Then add in powdered peanut butter or nut butter.
- Chop up your Bold Bitez into small pieces and fold them in to nice cream.
- Serve immediately. Or if want it scoopable, freeze first for 30 minutes.
Notes
Plan for this the night ahead so you can freeze your bananas!
