Because as much as I love a good warm cookie, sometimes I just want the dough! I know we have all been there am I right? This simple cookie dough is only 6 ingredients and it’s secretly healthy! Made with chickpeas and nut butter, this tasty cookie dough is a good source of protein and fiber.
This actually isn’t my first edible cookie dough recipe. You can check out my vegan protein cookie dough if you want a nut free option. It is also chickpea based but includes some fun other ingredients and I added some of my favorite protein powder to give a boost of protein to your snack! You could also add protein powder to this if you like that extra boost but you definitely don’t have to.
Let’s Make Some Edible Chocolate Chip Cookie Dough!
Chickpeas – they have little skins on them. And I don’t know whey they bother me but I like to take them off before blending them. I know that may seem tedious and you totally don’t have to. But if you want to, what I do is just strain them in my strainer and then go through them while they are sitting in that and take off the skins. I don’t meticulously make sure I get every single one, just try to get most of them!
You can use any chocolate chips for this, I just recommend dairy free if you want to keep the cookie dough vegan but it’s up to you!

Ingredients
- 1 (15oz) can chickpeas, rinsed and drained
- 3/4 cup creamy salted almond butter or peanut butter
- 1/2 cup chocolate chips
Instructions
- Remove skins from chickpeas (optional).
- Blend the chickpeas and nut butter in a food processor until smooth, transfer to a mixing bowl.
- Fold in chocolate chips, and serve as is, or roll into balls for cookie dough bites!
