Everything we love about pumpkin pie, minus the oven. These no bake pumpkin pie bars have a chewy, subtly sweet crust and a classic (but healthy) pumpkin pie filling. They are gluten free, vegan, and refined sugar free.
Gotta love pumpkin pie come fall time! Definitely a favorite around here but I decided I wanted to make a healthy, easier version of it, cause that is what I do 🙂 these bars are great because they taste just like your favorite pumpkin pie but they don’t require the oven! Plus they are way healthier. Microwave one for a few seconds before diving in and I promise you think you will be eating the real deal!

Let’s Make Some No Bake Pumpkin Pie Bars!
Okay who else loves a no bake recipe!? I am raising all of my hands and all of my toes. Makes life so much easier! No wondering if they are going to bake right, no risk of burning, and they don’t take up space in the oven!
These bars are made SUPER easy by using Abbys Better walnut cinnamon bites. I literally just took five bags, balled them up in my hands, and flattened it into the baking dish. BUT if you cant/ don’t want to get those, you can use any of my other no bake crusts found on these other posts:
Then once you have your crust ready, you just mix all of your topping ingredients together, put in the fridge and just wait until it is ready. Easy peasy.
I have not tried this with any substitutes and I would not recommend subbing out the coconut flour. However you can probably swap the agave with maple syrup or honey if not vegan). Other than that just leave a comment if you have a question and I am happy to help!

- parchment paper
- an 8×8 baking dish
- 2 mixing bowls
- something to mix with!

Everything we love about pumpkin pie, minus the oven. These no bake pumpkin pie bars have a chewy, subtly sweet crust and a classic (but healthy) pumpkin pie filling. They are gluten free, vegan, and refined sugar free.
Ingredients
Crust:
- 5 (3.5oz) bags of Abby’s Better apple cinnamon walnut bites
Pumpkin Pie Topping:
- 1/2 cup cashew butter
- 1/4 cup agave
- 1 cup pumpkin puree
- 2 tbsp coconut oil, melted
- 1/2 cup + 1 tbsp coconut flour
- 1.5 tsp pumpkin pie spice
- 1 tsp stevia
Instructions
- Make the crust by balling the bites into one large round piece of dough. Flatten into an 8×8 baking dish lined with parchment paper.
- In one mixing bowl, combine the dry filling ingredients (coconut flour, pumpkin pie spice, stevia, and stir until combined.
- In another mixing bowl, combine the wet ingredients (cashew butter, agave, pumpkin puree, melted coconut oil) and stir until combined.
- Add your wet ingredients to your dry ingredients and mix until well combined.
- Top your crust with your filling, and refrigerate for at least 30 minutes to allow to harden.

If you don’t have access to any Abby’s Better, you can use any of my no bake crusts from other recipes: no bake fruit tart, no bake mango cheesecakes, no bake key lime pie bars.
