Lighter Banana Pudding


Lighter Banana Pudding brings you a dessert you will feel good about.  Made healthier using gluten free animal crackers, coconut milk based cool whip, and no added refined sugar.  It is the perfect treat to satisfy your sweet tooth without any of the guilt!

I know you know I am usually a chocolate gal when it comes to my desserts, but this banana pudding has seriously stolen a piece of my heart.  

It is so much lighter than your traditional banana pudding so it doesn’t leave you feeling heavy and gross once you are done eating.  It is made with quality ingredients that you can feel good about not only eating yourself, but serving to your friends and family too.  Plus it is just a really fun dessert to serve!

Banana Pudding usually has vanilla wafers throughout it, but this recipe gives you something even BETTER.  I recently tried Goodie Girl’s Magical Animal Crackers and yall I am officially obsessed.  These cookies are gluten free, peanut free, egg free, and Kosher certified.  And yall they are SO COOL – they have mermaid, unicorn, and dragon shaped cookies.  What more could you want!?  Kids (and adults) really love the fun shapes! I was so excited to have the opportunity to partner with them to bring you this recipe, and I know you will enjoy!

No Sweetened Condensed Milk

When I was doing some research on banana pudding recipes, literally none of them out there were made without sweetend condensed milk.  And I just don’t think that is necessary.  Condensed milk is basically milk with water extracted, and a ton of sugar added to not only sweeten it but preserve shelf life.  Two tablespoons of one of the leading brands contains 22 grams of sugar (no thank you).  The bananas, cashew milk, and cocowhip make this perfectly sweet without all of that added sugar!

Let’s Make Lighter Banana Pudding!

Want to make the best batch of banana pudding?  Here is how:

  • The riper the banana the better – bananas get sweeter as they ripen so that helps make this dessert perfect without any added sugars!
  • I used CocoWhip to cut down on the dairy as much as possible as well as to avoid the sugars in traditional cool whips (this one only has 2 grams per serving!)  But you can feel free to also use a traditional cool whip.
  • Don’t forgo the coconut flour!  It helps make it nice and thick.
  • The more animal crackers the better!  I love getting a nice chunk in each bite 🙂

Description

Gluten Free

This banana pudding is made healthier using gluten free animal crackers, coconut milk based cool whip, and no added refined sugars.  It is the perfect light treat to satisfy your sweet tooth!

Instructions

  1. Blend bananas and milk together in blender or food processor, transfer to a small sauce pan on the stove over medium heat.
  2. Stirring continuously, add coconut flour and mix until consistency thickens.
  3. Remove from heat and refrigerate for 30 minutes.
  4. Whisk in the cocowhip.
  5. In an 8×8 baking dish, line the bottom with a layer of animal crackers, as well as along the edges.  Pour a layer of the pudding in using one half of the pudding.  Then add another layer of animal crackers, and top with the remaining pudding.
  6. Cool in the refrigerator for at least an hour, and then top with animal cracker crumbs and banana slices to serve.

Notes

You can also use regular cool whip if you do not have cocowhip
