Whether you are already a kale fanatic and just looking for a fun new way to get your daily dose of greens (I mean green smoothies are always a good idea but sometimes you want to switch it up!) or you are buying kale for your first time unsure if you are going to like it, kale chips are a great new option to try! I was thrilled with how crispy they really did get, and you can top them with any flavors you like! So even if you are skeptical I ask that you just give it a shot before buying another bag of deep fried potato chips. I think you will be glad you did!
The Perfect Chip
This recipe is relatively straightforward and easy to follow. However I always like mentioning a few things about my recipes to help ensure that you get the best outcome possible the first time! So here are my tips for the perfect kale chip:
- Don’t overload your baking pan – only use enough kale to make one thin layer of leaves – this way every chip gets thoroughly baked (step 2 below will also help you remember this).
- Don’t overcook – you can definitely play with the cook time depending on how crispy you want your chips, but if you let it go too long you will be left with a pile of burnt greens!
- Top with YOUR favorite spices – I think the options I give here are the bomb dot com, that is why I suggest them! But if you have a certain spice or flavoring that you are obsessed with, use that! You will like these more if you stick true to your favorite flavors.
- Serve as soon as possible – these really do come out SO crispy – I was so happy! But they will lose their crisp over time, so try to serve them to your guests soon after making them whenever possible.

Kale Chips
Ingredients:
- Kale
- Nutritional yeast
- Onion powder
- Sea (or Himalayan) salt
- Olive oil
- Optional: cayenne pepper
Instructions:
- Preheat oven to 350F.
- Grab the baking sheet you will be putting these in the oven with, cover in parchment paper, and spread as much kale on top of it as you can evenly in one layer (you don’t want to overlap the kale to ensure even cooking, and this step allows you to get just the right amount that will fit!).
- Take your portioned kale and put in a mixing bowl.
- Spritz with olive oil (using a mister like this one) and make sure that it coats evenly, by mixing in between spritzes.
- Coat with as much of the nutritional yeast and spices as you’d like! Also make sure they get evenly disbursed so every chip is flavorful!
- Cook in the oven for 10 minutes.
- Remove and rotate baking sheet, moving chips that were in front of the oven to the back, and cook for about 5 more minutes, until crisp and golden brown.**
- Enjoy (relatively) immediately – at least same day. They will lose their crunch over time.
**Note: Most recipes for chips say to flip/stir the chips to ensure even baking. I did not find that necessary. If you would prefer to stir the chips around to obtain the same outcome that is fine too! But in my experience simply rotating the pan helped everything evenly cook, and this way I didn’t have to touch the chips (because once I stir something like this I can never seem to get them evenly spread on the pan again 😛 but maybe that’s just me).
