How to Make Jumbo Lemon Poppyseed Muffins

  • Flour
  • Baking Powder
  • Salt
  • Baking Soda
  • Sugar
  • Butter
  • Egg
  • Buttermilk
  • Sour Cream
  • Vanilla
  • Lemon
  • Poppyseeds
  • Powdered Sugar

Substitution Options

  • Flour – This recipe was made with all purpose flour, however, having experience using gluten free flour blends, I believe these muffins would be wonderful with gluten free flour. My favorite brand to use is Bob’s Red Mill. 
  • Buttermilk – If you do not have buttermilk, swap 2 tablespoons of milk and add in 2 tablespoons of white vinegar. 
  • Sour Cream – You may use greek or plain yogurt instead of the sour cream with the same results.

Tips for Baking the Best Lemon Poppyseed Muffins:

  • Only mix these muffins until the flour is incorporated to ensure that the muffins remain soft and tender. Overmixing can result in a tough muffin.
  • If you want a thicker glaze, reduce the amount of lemon juice. If you want a thinner glaze, increase the amount of lemon juice. 

What is the texture of these muffins?

These jumbo, bakery style muffins are incredibly soft and very moist. They are filled with poppyseeds and have a wonderful, light lemon flavor. The smooth glaze on top adds in an added lemon zing that complements the sweet muffin. 

How do I store leftovers?

Muffins may be stored in an airtight container or baggie for up to 4 days.

Ingredients

  • 1 3/4 cup flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 3/4 cup sugar
  • 6 tablespoon butter (melted)
  • 1 egg
  • 2/3 cup buttermilk
  • 1/4 cup sour cream
  • 1 teaspoon vanilla
  • zest of one lemon
  • 2 tablespoon poppyseeds

Instructions

  1. Preheat the oven to 350 F. Spray a jumbo muffin tin with baking spray and set aside.
  2. In a medium mixing bowl, combine the flour, baking powder, salt and baking soda. In a large mixing bowl, whisk together the butter and sugar. Add in the egg and whisk. Next, add in the buttermilk, sour cream, and vanilla. Add in the lemon zest and whisk again. Add in the flour mixture and whisk just to combine. Mix in the poppyseeds. 
  3. Divide the muffin batter between the jumbo muffin tins. Place into the preheated oven to bake for 25-30 minutes or until a toothpick inserted comes out clean or with moist crumbs. Once baked, remove from the oven and let cool. 
  4. While the muffins are cooling, make the glaze. Whisk the powdered sugar and lemon juice until smooth. 
  5. Once the muffins are cooled, spread the glaze on top. If you wish, you can sprinkle some poppy seeds on top of the glaze. Serve and enjoy!
