No mayo, no additives, just great flavor, three ingredients, and the perfect kick make this jalapeno dijon tuna salad the best quick lunch you will ever make!
I am not a huge mayo person so I like to play around with the various “salads” that call for it (check out my fun take on cabbage slaw). And this one just happened to work perfectly! I actually made this out of last resort one day when I was starving and didn’t plan to put it on the blog but I fell in love with the combo and felt like I couldn’t keep it from you! I didn’t have any celery like most tuna salads do so I swapped it out for jalapenos. Such a great idea because they still give it a crunch plus they add a nice little bit of spice!
And I used dijon mustard instead of mayo. I am thinking a good horseradish mustard could also be a winning combination for this one but I’ll keep you posted. This recipe is great for a last minute snack, a quick dinner, or the EASIEST lunch prep you will ever make (just double or triple the recipe to last you all week!) So without further ado let’s get to making the goods.
Let’s Make Jalapeno Dijon Tuna Salad!
All you need to do is gather your ingredients for this one and mix them together. I recommend looking for a quality tuna brand that certifies it is low in mercury. And also one that is just in spring water. You don’t need the added oils for this recipe and tuna is a fish you want to watch that mercury intake with!
And you can choose and dijon mustard you like for this one. Most brands have good ingredients but you can always check the label. I like Sir Kensington’s if you want a recommendation though.
I didn’t really measure my jalapenos. Add as many as you want! You could also add some extra spices if you want to go a little crazy. Let your creative juices flow 😛
You can enjoy this by itself, with some celery or crackers, or make a sandwich out of it. I used a Mikey’s toasted english muffin and it was the bomb dot com.
In addition to the listed ingredients, you will need:
- a bowl to mix in
- a utensil to mix with
and that is it! It really takes all of about 5 minutes. Enjoy!
