Ingredients and Substitutions
- Potatoes– I used a combination of petite red potatoes and petite gold potatoes but you can use all red or all gold potatoes, if you prefer.
- Broth– You can use beef or chicken broth which will help add flavor to the dish.
- Cheese– I used extra sharp cheddar. you can also use a combination of sharp cheddar and mozzarella, for a different flavor.
- Sour cream– This adds a creamy tang. I don’t recommend substituting for Greek yogurt.
- Ranch– Use your favorite ranch dressing. I like Brianna’s or Hidden Valley.
- Milk– You can use 2% or whole milk.

I’ve tried a lot of ranch dressings and my favorites are Brianna’s Ranch Dressing and Hidden Valley Ranch. Hidden Valley is a bit cheaper but I love the buttermilk flavor of Brianna’s. Either one works great in this recipe!

These Instant Pot cheesy ranch potatoes are perfect for your next party! They come together quickly and the combination of cheddar, ranch, and bacon will have your friends and family coming back for seconds!
Ingredients
- 1lb petite gold potatoes, sliced in half
- 1lb petite red potatoes, sliced in half
- 1 cup beef or chicken broth
- 1 cup sour cream
- 1 cup buttermilk Ranch dressing
- 1/4 cup 2% or whole milk
- 1 1/2 cups shredded extra sharp cheddar cheese
- 3-4 slices cooked and crumbled bacon or 1/2 cup bacon bits
Instructions
- Place the potatoes in the Instant Pot inner and add the broth.
- Close the Instant Pot lid and set the vent to sealing.
- Press Manual and make sure High Pressure is selected. Cook for 4 minutes and quick-release as soon as the timer goes off.
- Carefully drain off any excess liquid.
- In a small bowl, mix the sour cream, ranch dressing, and milk until smooth.
- Spoon the sauce into the bottom of a serving bowl, setting 1/2 cup aside for drizzling over the top of the potatoes
- Add potatoes and drizzle with the remaining sauce. Sprinkle with the shredded cheese, and top with bacon.
- Broil in the oven until cheese is melted. Serve immediately.
