- Sour cream – This adds a creamy tang. I don’t recommend substituting for Greek yogurt.
- Ranch – Use your favorite ranch dressing. I like Brianna’s or Hidden Valley. If you’d rather use a dry ranch seasoning mix, whisk one packet of ranch dressing mix into the sour cream and milk instead of the bottled dressing.
- Milk – You can use 2% or whole milk.
- Seasoning – Salt, pepper, and a little garlic powder bring out the flavor of the potatoes.

I’ve tried a lot of ranch dressings, and my favorites are Brianna’s Ranch Dressing and Hidden Valley Ranch. Hidden Valley is a bit cheaper, but I love the buttermilk flavor of Brianna’s. Either one works great in this recipe! In a pinch, a packet of dry ranch seasoning mix stirred into the creamy base works too.
Tips for the Best Bacon
For crunchy bacon pieces, cook your slices of bacon until crisp and crumble them over the top just before serving. If you prefer softer bacon, stir it into the sauce so it warms through. Real bacon bits are a great shortcut when you’re short on time.
Storage and Leftovers
Store any leftovers in an airtight container in the fridge for up to 4 days. Reheat gently in the microwave or in a 350°F oven until warmed through. The potatoes will soak up some of the sauce as they sit, so add a splash of milk when reheating to bring back that creamy texture.

Ingredients
- 1 lb petite gold potatoes, sliced in half
- 1 lb petite red potatoes, sliced in half
- 1 cup beef or chicken broth
- 1 cup sour cream
- 1 cup buttermilk Ranch dressing (or 1 packet dry ranch seasoning mix)
- 1/4 cup 2% or whole milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1 1/2 cups shredded extra sharp cheddar cheese
- 3–4 slices cooked and crumbled bacon, or 1/2 cup bacon bits
- 2 tablespoons chopped fresh parsley, for garnish
Instructions
- Place the potatoes in the Instant Pot inner pot and add the broth.
- Close the Instant Pot lid and set the vent to sealing.
- Press Manual and make sure High Pressure is selected. Cook for 4 minutes and quick-release as soon as the timer goes off.
- Carefully drain off any excess liquid with a slotted spoon.
- In a small bowl, stir together the sour cream, ranch dressing, milk, salt, pepper, and garlic powder until smooth.
- Spoon the sauce into the bottom of a serving bowl, setting 1/2 cup aside for drizzling over the top of the potatoes.
- Add the potatoes and drizzle with the remaining sauce. Sprinkle with the shredded cheese, and top with bacon.
- Broil in the oven until the cheese is melted. Garnish with parsley and serve immediately.
