This vegan quesadilla recipe is made with your favorite hummus stuffed in between two gluten free tortillas, piled high with your favorite veggies and is the perfect plant based lunch or dinner option for a quick meal!
So I eat dairy. In case anyone was wondering. I think all foods can fit in a healthy lifestyle as long as you don’t have allergies or sensitivities, which I do not. But I do love to make plant based meals because I like to make recipes that are great for all of you – regardless of dietary restrictions – and because I do like to try to eat plant based as often as I can myself!
But I was SUPER skeptical about a hummus quesadilla. The melty cheese is always the best part! But I was really pleasantly surprised by these. The warm hummus, no does not taste like cheese, but is a really great alternative. I have never had warm hummus and it really has something extra when it is stuffed between two crispy tortillas. So three thumbs up for this one!
Let’s Make a Vegan Quesadilla with Hummus!
So the amounts below are going to be pretty general, because it really depends on how much hummus you pack in and how many veggies you pile on. But I just bought an 8 oz container and used maybe around half of it for two quesadillas, so use that as a reference!
I used regular hummus in my recipe, but feel free to switch it up depending on what you are feeling! And like I said I bought it from my store, but if you prefer a homemade hummus you can try this with my pumpkin hummus, my buffalo cauliflower hummus (a chickpea free option!) or my spinach and artichoke hummus. All will bring something a little different and a little fun to your quesadilla!
For my tortillas I used Siete’s cassava tortillas. This means these vegan quesadillas are also gluten free and grain free! You can use any tortillas you want. Another gluten free option I love is Siete’s – they have cassava and almond flour tortillas.

This vegan quesadilla recipe is made with your favorite hummus stuffed in between two gluten free tortillas, piled high with your favorite veggies and is the perfect plant based lunch or dinner option for a quick meal!
Ingredients
- 2 tortillas (I used these ones that are gluten and grain free)
- 1/4 – 1/3 cup hummus of choice (I used original)
- Veggies of choice (I used black olives, chopped cucumbers, and diced tomatoes)
- Avocado oil (for spraying pan)
Instructions
- Spread a light layer of hummus evenly over one side of both tortillas.
- Top one of tortillas with veggies, place the bare tortilla over the one with veggies.
- Warm a skillet over medium heat on the stove, spray generously with avocado oil, and place your quesadilla on top. Let it heat up until the bottom tortilla is golden brown, then carefully flip.
- Cook until second side is golden brown, then remove from pan.
- Cut quesadilla into four pieces with kitchen knives or a pizza roller, then enjoy!
Notes
Be careful if you want to make a half quesadilla using only one tortilla and folding it over. The tortillas I used ripped when I tried to do this, so I recommend making a whole one. But traditional wheat or corn tortillas may be fine for that!
