This honey lime summer salad combines the fresh flavors of summer fruits with a hint of mint and a subtle sweet honey glaze to elevate your fruit salad to a level never seen before. Enjoy as a side dish or make a big batch and bring to a BBQ!

The secret ingredient you didn’t even know your barbecue was missing. This summer salad is the perfect combination of refreshing, sweet, and tangy. Add my favorite addition and it even gives it a little kick! It is the perfect side dish for all of your summer dinner parties, but don’t let the fun stop there. I must admit it is also REALLY delicious poured on top of some ice cream 🙂

Another benefit of this recipe is that it is really easy to make. No baking, no long prep time, just chop up some watermelon and mint, mix together your sauce and pour it on top!
You can make this recipe the day of or the day before you want to use it. I actually think it is better the next day because it gives the fruit some more time to absorb the flavors, but it is really up to you! That can be a nice way to have it done before the big day, but if you’d prefer to make it the morning of it will still be delicious!
This isn’t a huge batch so if you are having a lot of people over feel free to double or even triple it! But you want to use it within 3 to 4 days of making it, so try not too make more than you will need. You want it to be fresh! Like I mentioned above, if you do find yourself with leftover, it is really good poured on top of some vanilla ice cream!

Honey Lime Summer Salad With Mint

This honey lime summer salad combines the summer flavors of our favorite fruit with a hint of fresh mint and a subtle kick to elevate your fruit salad to a whole new level
Ingredients
- 1 cup cubed watermelon
- 1/2 cup blueberries
- 1 tbsp honey
- 1 tsp lime juice
- Handful of fresh mint, chopped
- Optional: cayenne to taste
Instructions
- Combine fruit in one bowl, set aside,
- In a small mixing cup combine honey, lime juice, and cayenne if desired. Whisk until well combined.
- Pour honey mixture over dressing and toss until evenly coated, slowly incorporating mint so it disperses evenly.
- Serve immediately or store in fridge overnight.
Notes
This is delicious the day of, but I think letting it sit overnight makes the flavor pop even more!
Vegan? You could try swapping the honey for a little agave or maple syrup. I haven’t tried this but would love to hear your experience if you do!
