A Last Minute Party Planner’s Dream
Being late on the game for Valentine’s Day is what sparked this recipe for me initially. I knew I wanted to create something festive but I had been traveling so much the two weeks leading up to the holiday that I had no time to really think about what I’d make. So three days before the big day I was sitting in my kitchen contemplating. And then looking through my pantry I saw my Emmy’s Organic cookies and my new Suncore Foods fuchsia hibiscus flower powder I’d been dying to use, and that is when I knew I could make something fun.
But these could be great for any last minute event! A birthday party, dinner gathering, a Bachelor watch party 😛 you name it. Actually they’d be really precious for a gender reveal party. Get yourself some Suncore butterfly pea powder, make a blue batch and this pink batch, that would be adorable!
There are three main things that I believe make this a killer recipe:
- They are so incredibly easy to make. They only require three ingredients and take all of about five minutes to throw together.
- They look and sound super impressive. I mean come on, if you tell someone you are serving hibiscus tartlets at your party, they are going to think you spent hours in the kitchen or spent a fortune at a boutique bakery.
- These tartlets are gluten free, dairy free, and vegan. So they are allergen friendly and perfect for any dietary restrictions!
And okay there is actually a fourth thing. One that I know I always appreciate. They are bite sized! I have a huge sweet tooth and love desserts, but I hate committing to a whole fat slice of cake or a cookie that is as big as my head. These help with portion control! Which I know I can always use some help with!

Three Quality Ingredients
So as I mentioned, these only require you to have three items handy. Emmy’s Organic cookies, Suncore Foods hibiscus flower powder, and Lavva dairy free plain or vanilla yogurt.
You can also add a sweetener if you’d like, but I don’t think you need one. Especially if you are using vanilla yogurt. The cookies are pretty sweet themselves, so I think that a more tart filling is the perfect complement. But you can taste the filling as you go and decide for yourself!
Not only do these three ingredients make this so easy, it makes this a really quality treat to serve your loved ones. As I mentioned before these are gluten and dairy free, and vegan friendly. Deeper Dive Into Hibiscus Powder
So I am sure a lot of you out there have probably never used hibiscus powder and don’t really know what it is. So I wanted to give a little more info! I love using Suncore Foods fuchsia hibiscus flower powder as a natural food coloring to avoid unnecessary chemicals and dyes in my recipes. The color is a soft pinkish/purpleish and it makes for super cute baked goods and pretty smoothies!
The powder does have a tart, berry-like flavor, but it is super subtle that adds the perfect hint of flavor to whatever you put it in.
But beyond fun colors and a great flavor, there are also many health benefits of hibiscus flowers! They include the following:
Lowering bad cholesterol
Lowering blood pressure
Increasing good cholesterol
Managing inflammation
Improving digestion
I mean if my dessert can do all of that, count me in!

Let’s Make Hibiscus Tartlets!
So first you are going to have to get yourself some Emmy’s Cookies. Because that is going to be the base for these! If for some reason you really don’t want to do that you can use the crust from my mini mango cheesecakes or my recipe from my no bake fruit tart. They will just require a couple extra ingredients but are both easy and really delicious!
Then is the hibiscus powder we talked about earlier in this post. An easy swap for that, that you may be able to find more readily, would be beet powder! I love coloring things with that too.
And then the yogurt. I recommend Lavva because it is incredible and has no added sugar, but the first time I made these I actually used plain Greek yogurt. And then I did it once with the Strawberry Lavva (which meant I didn’t need the hibiscus and these were TWO ingredients). So the point here is you can really use any yogurt you want and that your dietary restrictions allow! If you use plain greek yogurt I suggest considering adding some Stevia.

Three Ingredient Elegant Hibiscus Tartlets

These tartlets are going to be your new go to answer for “what are you going to bring to the dinner?” They have a sweet cookie crust with a tart yogurt filling, they are SUPER easy to make – but look really elegant – an they are gluten free, refined sugar free, can easily be made vegan, and are healthy too!
Ingredients
- Emmys Organics vanilla bean cookies (one cookie yields one tartlet)
- 1/2 tsp Suncore Foods fuchsia hibiscus flower powder
- 1/2 cup dairy free plain or vanilla yogurt (I recommend Lavva)
- Optional: 1/4 tsp stevia or sweetener of choice
Instructions
- Take one cookie and roll it into a ball shape, then flatten and form a crater with your thumb, set aside.
- Mix together yogurt, hibiscus powder, and stevia (if using).
- Drop a dollop of the yogurt in each cookie!

You can see that the amounts in the recipe are a little general. Basically what you need to know is that one Emmy’s cookie yields the crust for one tartlet. So however many you want to make, be sure to have that many cookies. And then the amount of filling you need will just depend on how deep you make your crusts, how full you want them, and how many you make! But for every 1/2 cup of yogurt I’d use 1/2-1 tsp of the powder. Start small and add more depending on the color and taste you want.
