These tartlets feature a sweet cookie crust and a tangy yogurt filling, and are incredibly easy to make yet look elegant. Plus, they’re gluten-free, refined sugar-free, can easily be made vegan, and are a healthy option too!
There are three main things that I believe make this a killer recipe:
- They are so incredibly easy to make. They only require three ingredients and take all of about five minutes to throw together.
- They look and sound super impressive. I mean come on, if you tell someone you are serving hibiscus tartlets at your party, they are going to think you spent hours in the kitchen or spent a fortune at a boutique bakery.
- These tartlets are gluten free, dairy free, and vegan. So they are allergen friendly and perfect for any dietary restrictions!
And okay there is actually a fourth thing. One that I know I always appreciate. They are bite sized! I have a huge sweet tooth and love desserts, but I hate committing to a whole fat slice of cake or a cookie that is as big as my head. These help with portion control! Which I know I can always use some help with!
Three Ingredient Tartlets
As I mentioned, you only need three ingredients for these tartlets: Emmy’s Organic cookies, Suncore Foods hibiscus flower powder, and Lavva dairy-free plain or vanilla yogurt.
You can add a sweetener if you prefer, but I don’t think it’s necessary—especially if you’re using vanilla yogurt. The cookies are already quite sweet, and the tartness of the filling perfectly complements that. However, feel free to taste as you go and adjust to your liking!

What is Hibiscus Powder?
I’m sure many of you haven’t used hibiscus powder before and might not know much about it, so I wanted to share some info! I love using Suncore Foods fuchsia hibiscus flower powder as a natural food coloring, which helps me avoid unnecessary chemicals and dyes in my recipes. It gives a lovely soft pinkish-purple hue, perfect for cute baked goods and vibrant smoothies.
The powder has a subtle tart, berry-like flavor that adds just the right hint of taste to whatever you use it in.
Beyond its fun color and flavor, hibiscus flowers also offer many health benefits, such as:
- Lowering bad cholesterol
- Lowering blood pressure
- Increasing good cholesterol
- Reducing inflammation
- Aiding digestion

Let’s Make Hibiscus Tartlets!
So first you are going to have to get yourself some Emmy’s Cookies. Because that is going to be the base for these! If, for some reason, you really don’t want to do that, you can use the crust from my mini mango cheesecakes or my recipe from my no-bake fruit tart. They will just require a couple extra ingredients but are both easy and really delicious!
Then is the hibiscus powder we talked about earlier in this post. An easy swap for that, which you may be able to find more readily, would be beet powder! I love coloring things with that, too.

These tartlets are going to be your new go to answer for “what are you going to bring to the dinner?” They have a sweet cookie crust with a tart yogurt filling, they are SUPER easy to make – but look really elegant – an they are gluten free, refined sugar free, can easily be made vegan, and are healthy too!
Ingredients
- Emmys Organics vanilla bean cookies (one cookie yields one tartlet)
- 1/2 tsp Suncore Foods fuchsia hibiscus flower powder
- 1/2 cup dairy free plain or vanilla yogurt (I recommend Lavva)
- Optional: 1/4 tsp stevia or sweetener of choice
Instructions
- Take one cookie and roll it into a ball shape, then flatten and form a crater with your thumb, set aside.
- Mix together yogurt, hibiscus powder, and stevia (if using).
- Drop a dollop of the yogurt in each cookie!

You can see that the amounts in the recipe are a little general. Basically what you need to know is that one Emmy’s cookie yields the crust for one tartlet. So however many you want to make, be sure to have that many cookies. And then the amount of filling you need will just depend on how deep you make your crusts, how full you want them, and how many you make! But for every 1/2 cup of yogurt I’d use 1/2-1 tsp of the powder. Start small and add more depending on the color and taste you want.
