Have your pie and eat it too.  Might not be the way the saying goes but it should be.  This healthy sweet potato pie takes one of our favorite traditional Thanksgiving desserts and makes it a little cleaner so we can feel better about serving it to our families, but keeps alllll the flavor we love.

In all honesty I hadn’t had sweet potato pie until a couple of years ago when Neil’s family had one at their Thanksgiving dinner and I decided to try it.  Who knew what I was missing all this time!  I should have known considering i LOVE sweet potatoes but wow was it good.  I blame not growing up in the south. But anywho, that is what inspired me to create a lighter version of it – one that won’t weigh you down after a big holiday meal!  It’s the perfect dessert for Thanksgiving, Friendsgiving, or even just Friday night.  Super soft and creamy, spiced up just right, and made with great ingredients too.

Let’s Make a Healthy Sweet Potato Pie!

First trick to keeping this easy is starting with sweet potato puree (you’re welcome).  I thought about using sweet potato but as long as you get a puree with the only ingredient as sweet potato, the quality is still the same and the workload is WAY less.  No peeling, chopping, cooking, or mashing. All you have to do is combine!

Then all you need is a couple of eggs, tapioca flour, and some spice!  I haven’t tried this with any other flour so I can’t guarantee the results with any substitute, but luckily tapioca flour is not one of the more expensive grain free flours! You can find it at any Publix or Whole Foods or even check out my Amazon shop under baking ingredients for the one I use!

Baking time is a little tricky with this one because I think it will vary oven to oven quite a bit, and it will depend on the exact size pie pan you use.  What I recommend is just checking on it after about 45 minutes – when it springs back to your touch it is done!

Your favorite sweet potato pie that tastes just like momma used to make, but made healthier using no refined sugar, zero butter, and just the good stuff.


Ingredients

Crust:

Filling:

  • 2 (15 oz) cans of sweet potato puree
  • 2 eggs
  • 3 tbsp tapioca flour
  • 1/3 cup agave
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • a couple dashes of salt

Instructions

Crust:

  • Instructions for my crust mentioned above can be found here
  • If you buy a premade crust just follow the directions on the package!

Filling:

  1. Combine all ingredients together in a large bowl and mix until well combined.
  2. Pour into your pie crust, smoothing out the top.
  3. Bake at 400F for about an hour – an hour and fifteen minutes.  You will know it is ready when it is firm to the touch.
  4. Let cool to finish setting.

Notes

If your pie crust edges hang over the side of your baking dish you may want to cover the edges of the pan in aluminum foil after about 30 minutes so that the crust does not burn.
