Whether it is your birthday, anniversary, or just a Tuesday morning, this funfetti french toast will get you in the mood to celebrate! Made with gluten free bread, dairy free milk, and pasture raised eggs, it’s got ingredients you can celebrate too!
Okay hands up if you believe that funfetti is the BEST FLAVOR OF ALL TIME! I know you’ve got your hands raised over there and so do I. Funfetti has been my favorite since I was a little kid. I still to this day only want boxed funfetti cakes for my birthday, and I even tried to have one as my wedding cake (stupid venue only allowed “licensed bakers”). The love truly runs deep.
The best thing about this recipe is that it takes that beloved flavor and gives it to us in an actually healthy way. I used gluten/grain free bread for this french toast, almond milk and pasture raised eggs, and real almond extract and cinnamon. Real ingredients that you can feel good about. Guilty though – I used regular old rainbow sprinkles. Balance right? You can find some organic ones at Whole Foods if that is your jam though.

Let’s Make Some Funfetti French Toast!
Alright let’s start with the bread. For this I used Soozy’s new grain free bread. It was really delicious! But you don’t have to use this bread. Use any that you like and that fits in your dietary needs!
The bread I used comes frozen, so I took it straight from the freezer the night before I was eating it and put it in my fridge. This allowed it to get a little stale which makes for the best french toast. You can do the same and I am sure even if your bread isn’t frozen it will still probably work!
For my mix I used almond milk to keep this dairy free, but you could also use coconut milk (I am sure that would be so creamy!) or really any milk you want. You do you.
The cinnamon sugar spice I used is from Primal Palate. I love it because it is made from maple sugar and saigon cinnamon so its got a little extra “health” snuck in there. But you can use a combo of any cinnamon and sugar you want! Coconut sugar or even cane sugar would be fine (I know – crazy – but it won’t kill you!).
Next, I like to dip my pieces of bread in the mixture for a good 30 seconds at least on each side. Let it soak up all the goodness to really make for a great toast!

Whether it is your birthday, anniversary, or just a Tuesday morning, this funfetti french toast will get you in the mood to celebrate! Made with gluten free bread, dairy free milk, and pasture raised eggs, it’s got ingredients you can celebrate too!
Ingredients
- 3–6 slices of bread
- 2 eggs
- 1/4 cup almond milk
- 1 tsp cinnamon sugar (I used this one from Primal Palate)
- 1 tsp almond extract
- rainbow sprinkles
Instructions
- Put your bread slices in your fridge overnight ( this allows them to get a little stale which is best for french toast!).
- The next morning, whisk together the rest of the ingredients (except sprinkles) in a shallow bowl.
- Dip each piece of bread in your egg/milk mixture (I like to soak each for a few minutes) and then place on a skillet sprayed with coconut oil, over medium heat, and add a few sprinkles (they will melt but still look fun!).
- Repeat with all of the slices of bread.
- Top with more sprinkles and maple syrup!
Notes
The cinnamon sugar mix I used can be substituted for 1/2 tsp of cinnamon and 1/2 tsp of coconut sugar (or stevia or cane sugar)
You can sub the almond extract for vanilla if you must, but if you like funfetti/cake batter recipes I suggest getting some almond extract because it really makes that great cake batter flavor!
I made three slices but had a decent amount of mix leftover, so I’d recommend making 5-6 slices with this!
