Harvest Quinoa Salad with Apple Cider Vinaigrette

All of your favorite fall flavors mixed into a satisfying quinoa salad.  Topped with the best apple cider vinaigrette you will ever taste – this harvest quinoa salad is tasty, easy to make, and perfect for meal prep!

I love a good salad.  But even better than a salad is a quinoa salad.  So filling and satisfying and it is a great vegan source of protein too!  And this one takes our favorite fall salad – the harvest salad – and adds quinoa and lots of great flavors to it.  Basically it is the best salad for the fall time that you could choose to make (in my humble opinion) 😛

Let’s Make a Harvest Quinoa Salad!

This is a “throw it together” kind of recipe so not too much to explain.  I do say halve or quarter your brussels – this is really up to you.  I like to halve mine but then the huge ones I will cut into quarters.  And then I cheated and bought frozen cubed butternut squash (the idea of cutting squash terrifies me 😛 ) so I just microwaved mine.  If you buy uncooked squash you will want to roast that with the brussel sprouts and probably start with the squash cause it will most likely take longer – you will bake it until it is soft.

I think the dressing is probably the best part of this whole dish so if you are like me and love sauce, I’d go ahead and make a double batch so you can add as much as you want.

You can also play around with the add ins.  If you don’t like onions or feta, nix them.  If you want to add some pumpkin seeds, go ahead! You do you.

In addition to the listed ingredients, you will need:

  • a pot to cook quinoa
  • a cookie sheet
  • aluminum foil or parchment paper
  • a knife
  • a small bowl and a whisk or fork for the dressing

All of your favorite fall flavors mixed into a satisfying quinoa salad.  Topped with the best apple cider vinaigrette you will ever taste – this harvest quinoa salad is tasty, easy to make, and perfect for meal prep!


Ingredients

Scale

Salad:

  • 1 cup uncooked quinoa
  • 2 cups water
  • 10 oz bag of frozen cubed butternut squash
  • 1 lb brussel sprouts
  • 1 small apple
  • 1/41/2 red onion
  • 1/3 cup dried cranberries
  • a handful of chopped fresh parsley
  • crumbled feta to taste

Apple Cider Vinaigrette:

  • 2 tbsp apple cider vinegar
  • 3 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 tbsp dijon mustard
  • 1/4 tsp salt
  • 1/8 tsp paprika

Instructions

  1. Cook quinoa according to directions.  Let cool once it is done.
  2. Take your brussel sprouts, cut in halves and/or quarters, spread on a cookie sheet lined with aluminum foil and bake at 400F for about 20 minutes, until soft.
    1. Dice your apple, add to cookie sheet after about 10 minutes and bake with the brussel sprouts for the remaining time.
  3. Dice your onion and add to quinoa.
  4. Microwave butternut squash according to directions, remove from bag once it is done, pat dry, and then add to the quinoa.
  5. Once brussels and apple are done, let cool a little bit and then add to quinoa mixture.
  6. Finish by adding dried cranberries and feta.
  7. To make the dressing, combine all ingredients in a small bowl and whisk to combine.  Pour over quinoa mixture and serve.

Notes

I like eating this both cold or warm so pick whichever you like better!

If you want it really saucy, make a double portion of the dressing to be safe.
