Fudgy Cinnamon Banana Blondies

A soft fudgy (gluten free) blondie that is sweetened with bananas and flavored up with some quality white chocolate and cinnamon.  The texture of these guys is unreal and you will love every bite!

I love a baked good made with bananas.  They naturally sweeten recipes without having to use a ton of sugar, and I think they bring a great fudgy texture to baked goods!  And when you add melted white chocolate to the mix, wow this is a good one!  I think I might add this combo to all my baking recipes 😛

These blondies are super fudgy and really decadent, but they are made with great ingredients! I call that a baking win in my book.

Let’s Make Some Cinnamon Banana Blondies!

Okay seriously the best blondies in the whole entire world so get excited!  Plus they are super easy to make.  Just get a super ripe banana and mash it up as well as you can.  Then you get some good white chocolate (I used Lily’s because it is stevia sweetened).  Melt that in your microwave, but do it in 30 second increments because you don’t want it to burn!

I say in the instructions to let your mix cool before adding the egg, and that really is only if it is super hot.  The only thing you want to avoid is the egg starting to actually cook before we put it in the oven.  If it is warm, that is totally fine!

I used Lily’s white chocolate chips for my chocolate.  I love that brand because it is stevia sweetened so no refined sugar, and they are just made with quality ingredients.  But you can use any white chocolate you prefer!

Other than that there is not too much to explain with this one.  I topped mine with a vanilla greek yogurt and some cacao nibs to make them extra fun, but I think they are almost better all by themselves!

In addition to the listed ingredients, you will need:

  • a large mixing bowl
  • a microwave safe bowl
  • some utensils for stirring
  • an 8×8 baking dish

Description

Gluten Free, Refined Sugar Free

A soft fudgy (gluten free) blondie that is sweetened with bananas and flavored up with some quality white chocolate and cinnamon.  The texture of these guys is unreal and you will love every bite! 


Ingredients

Scale
  • 2 ripe bananas
  • 1/2 cup white chocolate
  • 1 tsp coconut oil
  • 1 egg
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 tbsp stevia
  • 1 cup gluten free all purpose flour

Instructions

  1. Preheat oven to 375F.
  2. In a large mixing bowl, mash your bananas until minimum lumps remain.
  3. Then in a microwave safe bowl, melt your chocolate and coconut oil, add to bananas once melted.
  4. Let cool a little, then stir in egg, baking powder, salt, cinnamon, and stevia.
  5. Lastly, mix in your flour and stir until well combined.
  6. Pour into an 8×8 baking dish lined with parchment paper, and bake for 20 minutes, until edges are golden brown and a toothpick comes out clean.

I used Lily’s white chocolate chips because they are refined sugar free

  1. I made these last night for my kid’s holiday cookie exchange, and they were great! I was pleased that they were not too sweet, but have a nice flavor, and the texture is definitely soft and gooey like a blonde brownie (without the very sweet taste). I would make these again!
