This tart is perfect for a last minute dessert option. It requires zero baking, only uses a handful of ingredients, and is so easy to make. It is light and refreshing and will leave your sweet tooth satisfied without feeling guilty.
Truth be told I am more of a chocolate dessert gal than fruity. I love a good fudgy brownie, or a single serve chocolate mug cake, but during the hot summer months I love a refreshing twist to my routine! And this tart does that perfectly.
This tart was created with the fourth of july in mind. The berries and the yogurt make the perfect red white and blue! So if you are looking for the perfect dish to bring to your BBQ this is it. And if you want even more patriotic food you could also try my honey lime summer salad with mint.
And if you don’t like some of the fruit used on here, or aren’t wanting that red white and blue look, feel free to swap them out! Think peaches, mango, apples, pineapple, the possibilities really are endless! If you love chocolate as much as I do, you could even add in some chocolate chips!
If you are vegan or dairy free you have a couple of options. To make this recipe dairy free, all you have to do is sub the greek yogurt for some coconut cream. To make it vegan, start with that step and then either omit the honey glaze, or swap it for another sticky sweetener like maple syrup or agave.
A couple of things to note:
- I haven’t tried making the glaze with anything but honey, and while I am sure it would work with other sweeteners, I’d love to hear your experience if you try it!
- I used a combo of walnuts and pecans in my crust. Only to make the flavor profile a little more interesting and combine some different nutrients. You can definitely use one or the other or even another nut if you prefer!
- I mention below freezing the crust – this makes the tart a little sturdier. If you leave it out too long the crust will start to be more pliable – this is fine – just be careful when serving and eating!
